the perfect tofu

i love tofu - and always have, even before i went vegetarian 15 years ago. but i cannot seem to perfect making it myself. does anyone have a fool-proof recipe for making what you consider the perfect tofu?

    I love to slice the extra firm tofu in to slices (1/4"?) , put them on a cookie sheet sprinkled on both sides with Braggs Aminos and nutritional yeast. Bake at 350, flip over after 10 or 15 minutes and cpntinue baking. You can take it out while still soft and moist or cook until chewy and dry. I love it both ways. Sometimes use it on salads (sliced in to strips), or just eat it It's really yummy! It may stick a little, so if you eat oil you can ad a little olive oil.
