Raw Potato Starch

Does anyone have any experience with using this as a thickener? I've done some research and from what I can find, it's not digested as a carb and feeds the gut bacteria.

I have some from when I was eating primal, and want to make stew with my bone broth.

Any thoughts, please?

    Cream Cheese, Coconut Cream, Creme Freche/Sour Cream, Egg Yolk or reduction tend to work, some people also use vegetable gums but they're not easily accessible from where I am.

    But I don't drink so...coconut flour. At least I'll try it. I just don't want it to taste like coconut.

    I have been using the Otsuka resistant starch powder this week that I posted about before Xmas -- one sachet in green tea, once a day, with lunch. It seems to be filling out my digestive track, ifyaknowwhatimean... I don't test my BG, so don't have any data, but it feels good to me. I don't get sleepier or have the usual signs associated with blood sugar uptake.

    Oh hey, @RalfLott How's the sauerkraut going? I made a batch and it was amazing! I kept it under the counter for almost two weeks, no mold, no foam. I used organic purple cabbage and salt. Also, I did it in my crock pot crock with a weighted plate.
    It's time for a new batch.

    A restaurant I go to uses it as a thickener. I've had dishes with it, without adverse impact on my blood glucose. (I have, however, also had a glass of wine with it - just to be on the safe side. I haven't done an independent test on it.

    I have tested other resistant starches, and can eat more of them than I would otherwise be able to eat and maintain control over my blood glucose.
