The perennial all star of winter root vegetables is the humble beet. They're so easy to prepare and so delicious in a salad or as a hearty veggie side. Who wouldn't love a sweet, delicious red or gold beet!
Bonus: you can eat the greens.
Bonus-2: Borscht!
Bonus-3: Pickled Red Beet Eggs
