All in one pot, (sort of) easy peasy

1.5 lb of ground turkey
1-2 TB of EVOO
1 decent size red bell pepper
1 decent size yellow bell pepper
1/2 onion (yellow or white)
1/2 cup of tri-color quinoa
1 cup of boxed chicken broth plus 2 Tablespoons
season to your own taste, I use grated red hot pepper
Saute' sliced onion in EVOO in a large skillet until translucent. Add sliced bell peppers and saute' till tender. Add ground turkey and continue saute'ing it all together low to medium heat. (I add a few tablespoons of the chicken broth at this point to keep everything moist.) While doing this, add quinoa and chicken broth in a saucepan and cook until all liquid is gone. Then, pour cooked quinoa into skillet, add whatever seasoning you like and turn off the stove because you're ready to dig in and enjoy!
