I was wondering if anyone had a good cheesecake recipe, one that doesn't have artificial sweeteners preferably. I've tried one made with stevia/monk fruit mix but the aftertaste is terrible!

in theory can't you make a regular cheesecake recipe and just leave out the sugar? It would still be rich and creamy just not sweet1

Yes you can.
When I made one for my birthday one year I just used a regular recipe but I added stevia and used almond flour pressed into the pan dampened with butter as my crust.
I baked it in a pan of water just like a traditional cheesecake. It was awesome.2 -

How about Erythritol. Swerve is one of the brand name. It supposedly "bakes like sugar". I have seen it in only one store locally, Earth Fare. I know you can get it on line.
Some one might know of a stevia product that is better for baking purposes. I think the "cup for cup (of sugar) pourable type stevias might be better formulated for baking? It is very easy to over do liquid stevia so yes, bitter and bad after taste. I think Truvia has a pourable type designed for baking. Not sure.1
