I made these a couple weeks ago. They're not fluffy, but they're not "eggy" either. They actually hit the spot! The best part was the zero calorie/carb Walden Pancake Syrup. http://www.myfitnesspal.com/recipe/view/195463483248493

Just made some this weekend for the first time and loved them. For one batch I used:
2 egg
2 oz cream cheese (normal fat)
1 tsp of vanilla
1/2 tsp of Stevia (granulated)
I cooked them in butter on the stove top about 1.5-2 minutes on each side
they were thinner then normal pancakes but equally delicious!0
