Fry Day: Jalapeno Poppers

Ingredients:
6 thick cut bacon slices
4oz cream cheese
4oz cheddar cheese, shredded
1.5oz jalapeno slices
Batter:
2 eggs
4T almond flour
2T parmesan cheese
1T water
Instructions:
1. Cook the bacon and crumble
2. Chop up the jalapeno slices
3. Combine the bacon, cream cheese, cheddar cheese and jalapeno slices
4. Form into 20 balls and refrigerate the balls
5. While the balls are cooling, make the batter by whisking the eggs then adding the Almond flour, parmesan cheese and cheddar cheese
6. Coat the balls and refrigerate again
7. Fry the balls until golden brown
8. Serve warm!
