Riced Cauliflower recipes -- GO!

:) Happy Friday!! So I have some riced cauliflower I need to cook tonight - after a long day of work - I've done the fried rice YUM!, the pizza crust MEH... but looking for something else?!?! I know I've seen some cauliflower tater tot recipes floating around......

But what would you do?

    I have made this a couple of times, but I swap out the fresh tomato and jalapeno for a can of Rotel tomatoes and green chilis. I also grated the cauliflower myself. It was easy and delicious! http://www.skinnytaste.com/mexican-cauliflower-rice/

    I have used whipped cauliflower to top Sheppard's pie (also used some of the whipped cauliflower to thicken the meat/veggies too) Yummy and low calories.

    "Rice Bowls", I usually use riced cauliflower in place of rice or potatoes! I put light butter and fat free cheese on mine and eat that with whatever protein we're having for dinner. I really don't miss the carbs that make me sleepy after dinner!

    FYI - here in ontario the new "bagged" craze is pre made cauliflower rice in the fridge section with the bagged salads. It really helps on those I do not feel like making such a mess days with the food processor..

    Fried Cauliflower rice is really delicious
    Cauliflower rice lettuce cups (treated like a burrito/taco)
    Cauliflower sushi wraps
    Cauliflower rice pudding
    Loaded baked cauliflower (like baked potato)
    Stuffed Peppers with cauliflower
    Cauliflower tots
    Cauliflower Fritters/balls - add egg and cheese and spices/herbs role into a ball and fry top with more cheese and pasta sauce
    All sorts of flavours you can make:
    Mexican
    Lime and Cilantro
    Curry Rice - add chickpeas
    Jambalaya

    "Mexican" Cauliflower Rice

    Finely diced red pepper
    Finely diced onion
    Finely diced jalapeno
    Finely diced zucchini
    Tomato Paste
    Chopped Tomato
    Penzey's Fajita Seasoning
    Riced Cauliflower

    Saute first 4 ingredients. Add paste and cook a little. Add all the rest and cook until desired consistency. Top with the juice of a lime and cilantro. So good!

    I use this as a base and make these changes... half the sauce (otherwise too drippy), replace the chicken with shrimp and replace the traditional rice with grated cauliflower "rice". Just put the cauliflower in last and cook for a couple of minutes. It's my favorite dinner and makes a great leftovers.

    za'atar is really yummy on cauliflower...a bit high in sodium but has a blend that really makes it more alive.

    I would love the recipes for Fried Rice, Rice Pudding, and Stuffed Peppers!

    Mmmmm!

    INGREDIENTS
    3½ cups Riced Cauliflower (frozen rices cauliflower)
    1 cup boxed coconut milk (almond, rice, etc will work too)
    3 tsp cinnamon
    2 packets stevia (or more depending on your sweet preference)
    ¼ cup Boxed egg whites

    INSTRUCTIONS
    Combine 1½ cup cauliflower with milk to a sauce pan, turn to medium heat
    add remaining ingredients and bring to a simmer (about 4-5 minutes)
    add remaining ½ cup cauliflower until you get desired consistency (you may not use it all)
    turn flame to low
    stir constantly until thickened (about 4-5 minutes)
    Cover and allow to continues to thicken
    ENJOY!
    *It's best if you refrigerate over night!
