Made a batch of sauerkraut last week, had to wait 7 days for the fermentation. It turned out good, with a little tweaking next time I hope to make it a touch more sour. Has anyone else made it before?

When I do shredded carrots I go the week. But for sauerkraut it's longer. I have a couple of ceramic bean pots I'm going to try to use to make my sauerkraut next time. It just gets better with age and it's so good for you.0

Yeah, I'm doing mine in mason jars, but may go online and find something like you would do kimchi in, not sure if it'd make a big difference, but if it's this good in jars, I can imagine how it'd turn out in something designed for the fermentation process. Any ideas?0
