What's your favorite thing to cook?

I'm trying to get in the habit to cook for the week. Stir Fry is one of my favorites. Looking for suggestions.

    Well, right now I have Lemon & artichoke chicken in the oven. I make this a lot as a special treat. Page 260- Practical Paleo book. I'm like the 30 minute chick. Plain and simple. Veg., salad, meat, fat.

    I'll look it up, Often I buy a rotisserie chicken from the deli and eat on it for a few days. Thanks for the reference. I love that book.

    As much as I like to cook, I suck at meal planning. That's why I'm trying to start cooking big meals for the week. Plan once eat all week.

    We have leftovers a lot here. It's only the two of us and my husband eats less than he used to. So we always have leftovers. Do like pot roast or roasted vegetables. That would last you a few meals. We do soups here also.

    Breakfast Skillet / hash. I got it from autoimmunewellness.com. just basically throw in whatever you have and have fun with seasoning. Right now it's ground turkey, roasted butternut squash, summer squash, red cabbage, scallions, and leafy greens.

    I also make great salmon with just evoo, sea salt, and ginger. And the instant pot is a life saver lol.

    I am getting more confident with my cooking skills, and am excited to experiment with more summer vegetables and grilling. I'm hoping to make my own kind of "admiral's feast" this weekend.
