Healthy Tofu Dinner

This quick and easy recipie offers exquisite tastes and textures. There is barely any cooking involved making it especially useful for times when you're in a rush or want a quick fix!

You'll need:

100g Tofu
30g Instant Noodles
1 Bell Pepper
1 cup of Spring Onion, quartered
2 carrots chopped
1 cube of fresh ginger
Chili Flakes for seasoning (Optional)
Ground Corriander for seasoning
100ml Light Soya Sauce


1. Place the uncooked noodles into a pan and pour boiling water over them (so they are just covered) and cover for 4-5 minutes.
2. Meanwhile place the chopped tofu into a bowl and press the liquid out making sure you pat them dry once finished. (This just makes the tofu more suitable for a stir-fry dish).
3. Place the Tofu and ginger into a pan and oil lightly (optional). Fry until lightly browned.
4. Then add the onion, pepper, spring onion and carrot. Add Soya sauce and fry until softened.
5. Drain the noodles in cold water, patting dry when finished.
6. Then add the ground corriander and Chili flakes to the dish and mix together ready for serving.
