Coconut flour?

Our supermarket had coconut flour out for 99c a bag last week, so my OH got 4 bags. I haven't used it before, I rarely make keto baked goods and if I do I use almond flour.

I found a good recipe online for coconut flour peanut butter cookies and made a batch. I made 12 fair size ones and they came in at 200 calories each and 3g of carbs. No problem to fit into my limits on occasion. I bagged them up individually and put them in the freezer so I don't feel like I have to eat them all in a short timeframe.

I had one last night with a cup of tea and this morning I have a painful bloated tummy and I'm up 1.5kg. This is UNHEARD OF for me, the most my weight ever fluctuates is about .4kg (I'm a daily weigher).

The cookie is the only thing I've had that's different. I don't have any food allergies that I'm aware of, but I can't help but think I have 4 bags of coconut flour I probably can't use.

    Love your new profile avatar picture! So sorry to hear about your tummy trouble. Do you/your body have any issues with fiber? The only thing I can think of is that coconut flour is high(er) in fiber than some other meals/flour typically used in LC cooking.

    I've had a container of coconut flour that I've been trying to use up forever! A little goes such a long way. I should probably just toss it instead of giving it the death of a thousand cuts by only using a couple Tbsp's at a time. All the fake baked goods just end up being disappointments.

    That's what happens to me with fiber. I can handle 2-3 grams but if I exceed my limit I'll feel like that for a day or two.
    Maybe it was too much fiber at once for your system? Factoring in any other fiber you had too...

    This happens to me when I binge on dried coconut :(.
    It doesn't when I eat a coconut flour waffle

    It was 50g of coconut flour across 12 cookies. Must have been enough to cause problems.

    coconut flour has a lot of fiber, so that's probably why you feel all bloated and terrible, especially eating it late at night before bed. Try having it during the day when you are up moving around, might not hit you so hard.

    I'm sure you have a local food bank that would love the unopened flour bags if you aren't going to use them!

    I was reading this thread last night and recall my calculations were it would be about 18 grams of fiber in the recipe and only ~1.5 grams per cookie.

    I too have that one bag that has been sitting in my refrigerator for a year with only a quarter of a cup gone for 2 mug cakes. Maybe it is only 2 Tbspoons gone. I forget how much was in each.

    Back to the OP's coconut flour reaction: I may eat more fiber than most on a ketogenic diet and while the little bit of coconut flour didn't cause any stomach/digestive pains, I think the stuff expands in one's stomach. LOL. Felt heavy. Not a bloated feeling. I didn't puff up or out. No grumbling. No cramping. It just felt "heavy" in my stomach. No other fiber seems to do that to me EXCEPT coconut flour. I like @tcunbeliever's suggestion of the food bank for unopened bags.
