I made rice free sushi (maki roll) today! Found this awesome recipe in a cooking book from the library. It tasted super delicious and much lower in calories than with rice. Here a picture from me how it turned out:

Ingredients:
- 2 cups cauliflower crumbs
- 1 tsp dried dill (I forgot that.) - for the cauliflower
- 1 tsp rice vinegar (I forgot that too...I worked out anyway.) - for the cauliflower
- 1/2 tsp stevia powder (I didn't do that on purpose, I don't like any sweeteners.) - for the cauliflower
- 1 avocado
- 1 carrot (cut in slim sticks or shaved)
- 3 nori sheets
- 1/2 bell pepper (I changed that and used instead 3 oz white crab meat mixed with 1 tbsp homemade mayonnaise)
