Vegetarian meal ideas

Hi, all. I want to reduce the amount of meat my family eats. The problem is that we need to eat relatively low-carb. Not keto-level, but the dietitian recommended no more than one carb-heavy item per meal (for example, no bread if we're having pea soup). Can you guys share your favorite low-carb vegetarian recipes with me?

    I don't eat vegetetarian but if you click on Low Carb Daily Forum at the top of the page then "launch pad", the then "Various LC..." then "Vegetarian" , there is a recipe link in there with 81 vegetarian recipes to get you started.

    At least that's the general idea of how to get there. Explore the stickies. I just upped my carbs a bit. If I stay at this macro allocation, occasional split pea soup (with ham for me) sure sounds tasty. :)

    If you like mushrooms, I hear portabellos make a great burger or "steak," because of their meaty texture. They're also a good source of protein and various micronutrients. Then there's always cheese stuffed mushrooms if you do dairy. Or mushroom stuffed peppers.

    Spaghetti squash is a good base for a lot of things, too. The cheesy casserole I make had been a hit with everyone who's tried it (I think it's in the recipe section already).
