4-ingredient chocolate pudding

Xantham gum is a pretty good thickener.. and you only need a small amount. You can find it at any grocery store, usually in the organic section. I used Bob's Red Mill brand.

What you'll need: 1/2 cup unsweetend cocoa 1/2 cup sugar substitute (I used xylitol) 1/2 tsp xantham gum 1 1/2 cups heavy whipping cream

In a small sauce pan, mix together your dry ingredients. Slowly whisk in your whipping cream.
When it's all mixed in, turn your burner on to medium and bring the pudding to a boil.. stir constantly!!! That's so important.
It will start to thicken pretty much immediately. Once you can dip a spoon into the pudding and it comes out covered in pudding, you're done!
Take off the burner, pour into bowls and chill!

    Yummy. Every once in awhile I make "mousse" with HEX, cocoa powder, and a little sweetener.
