Bone broth?

Supposedly bone broth is a great way to replenish electrolytes and has many fine qualities without adding a lot of calories. I made chicken bone broth today. Some recipes call for cooking the broth for 12 hours but I cooked it for 3 and that seemed quite enough. Have you made it and how long did you cook it?

I make it quite a bit with bones from my pork roast. I usually do a roast on Sunday afternoon, then in the evening I put the bones in a pot with water, some salt, and drippings from the roast pan. I let it simmer for 12 to 18 hours on low heat. I do top up the water if it gets low, usually in the morning after it's had 10 or 12 hours.
I've only ever used pork bones, so I can't comment on chicken. But I figure, the longer the better, get as much goodness as you can out of those bones.0 -
I cook for at least 24 hours. It takes longer than 3 hours for the collagen to get removed from the bone. Also leaving the cartilage in helps and it takes quite some time to break down fully as well. I see recipes for doing this on the stove, but I am not comfortable leaving my stove on that long. I use my crockpot instead.3
