Trying to find a dessert recipe so I can enjoy a sweet treat at my baby shower (I have gestational diabetes)

I don't know anything about gestational diabetes and only have a basic understanding of diabetic dietary restrictions, so forgive me in advance if I totally bork this. But, I love these little keto cheesecakes:

Like most folks, I added a 1/2 cup of coconut flour to the crust, and I used Swerve (don't know if you can eat sugar subs). They came out so so good, to the point where my completely non low carb husband is like "MAKE ME A BIG ONE!"
Obviously they're small, but they're incredibly satisfying.
