I would love to read everyone's favorite low carb, low calorie recipes. I could sure use some new ideas.

    Yesterday, for a quick lunch, I grabbed the fajita meat from the freezer (already precooked/seasoned), and sizzled with a little olive oil and garlic in a pan, then added the meat to lettuce leaves with some shredded cheese. It was really tasty. You can add salsa and sour cream to it as well.
    One of my favorite low carb breakfast is scrambled eggs with cream cheese. I scramble 2 eggs, and add 1 oz of cream cheese (cut it up in small chunks). The cream cheese stays chunky, but melts just a little.... so good!

    OK I found a great recipe for lettuce wraps using ground turkey. I am not going to enter the whole recipe, but is from Skinny Kitchen and it is called Low Carb Chicken Lettuce Wraps. The recipe makes 16 wraps, and each wrap is 62 calories (though when I put the record in MFP it can up with 78 calories) I had 1/4 of the recipe for dinner (it made 6 wraps for me) and they were truly great. Rivals PF Change in my opinion. Around 300 calories, 8 g of fat, and 16 carbs. And easy to make.

    Tonight I made turkey burgers on a bed of veggies with a Thai peanut sauce! For the turkey burgers, I used ground turkey and combined it with sauteed peppers and onions. Then for the bed of veggies I used broccoli slaw, bean sprouts, peppers, green beans, and onions. Tons of fiber, lots of protein, and for a 5oz portion of turkey it's a little under 350 calories! Solid win.

    For lunch yesterday I made "zuchini boats" with leftover tace meat, hollowed out zuchini and a little cheddar sprinkled on top, baked in the oven. Delish!!
