What are your Keto/LC thoughts on watermelon?
I'm basically in a maintenance level of Keto. I've eaten a little bit of it lately. I've heard that some believe the fiber, and water, makes it less evil. What are your thoughts.

I've eaten a couple of pieces. I'm not striving for for ketosis though. It's pretty carby so I weigh it. 4 ounces of watermelon isn't much! It didn't have any negative effect on me that I'm aware of but nothing does. It's summer. I enjoyed it.1

IIFYM but it's actually low in fiber and high in fructose, so not the best choice for a LC lifestyle.1

I don't like the texture of watermelon, so I eat a bit of musk melon/cantaloupe, or crenshaw, or honeydew. But rarely.0

I shall be In Italy later this year and one of my uncles (and therefore his children, my cousins - family business!) grows it commercially - so we shall doubtless be having a 'scorpacciata d'Anguria' at some point.
I shall have to restrain myself. I love the stuff, and as a kid, won many a devouring contest with my cousins. Once, one of them very nearly choked on a piece lodged in his throat.

Better to use watermelon extract within another recipe, I'd think. Maybe use a light squash as a neutral base? Or something else you like for texture - like with yogurt or gelatin?
Edited to add: my Endo told me that watermelon is essentially pure sugar with nothing to slow it down, and easily the worst melon and one of the worst fruits, as far as blood glucose hit.0
