Could "bad" carbs have SUCH an instant effect?!

For years, I had a permanent sensation that my knees and ankles were on fire at all times, but especially at night. Not exactly pain, but a sort of inflamation and deep ache that I just got used to. After the first month of eating low carb (15-30g), the sensation COMPLETELY went away. However, yesterday I had two handfuls of salt and vinegar chips. I did not go crazy but I wanted them and I had them. This morning I woke up with diarrhea (sorry) and this afternoon my knees and ankes hurt like hell. I can't believe it would be the chips, but it's the first time in about 2 months that I had such empty carbs and I can't figure out what else could have caused that familiar feeling to return. Could it be that such a small sidestep would have such an immediate effect?

Happens to me. I wonder if it happens to LCHF folks who've been into this WOE for a long time?1

@allunits After 40 years of pain levels of 7-8 in my joints and muscles just 30 days after I left sugar and all forms of all grains Oct 2014 my pain levels were down into the 2-3 range. Pain is even lower nearly three years later plus my blood work and health is better than 20-30 years ago. Now I have hope for an even brighter future than my wonderful past.
Some say LCHF is not magical but it has me fooled.5 -
I believe it. For me, I was suffering from all-over body soreness, and general body aches. I am 33 years old and I would groan getting up off the couch and hobble around my house. I had no idea I was so inflamed!
I went keto, and within 48 hours (I'm not even exaggerating! It was instant!) my body aches and all over soreness dissipated completely! THIS is what makes me want to shout from the rooftops and has me committed to keto for life. I feel pain free and limber, and I HAVE MY LIFE BACK! I can walk! I can stretch! I don't groan when getting up anymore...
I had a high carb day one time, and not even that much (like you describe here!), and the next day I was inflamed, achy and sore.
I started keto for the weight loss - I stay keto for how my body feels!!11 -
Yes! It's unbelievable what our old foods were doing to us! Isn't it wonderful to be in a nutritional place to see the difference?! Way to go!!4

Not always carbs/grains but food and ingredients absolutely impact your body... I used to drink 6-12 cans of diet Code Red Mtn dew every day for years. My already weak/sore/funky knees gradually got worse and worse over those years, so gradual I never associated anything. Near the end I could not walk up stairs, I had a handicapped parking pass etc. Docs said I did not have arthritis, and saw nothing wrong.
I forget why I quit drinking it (I think I switched to tea because I was trying to get off aspartame to be "healthy"). But after a few months I noticed my knees were so much better! Still didnt occur to me, until one day I needed caffeine and drank a single can of the old stuff. Couldnt walk by that night.
For awhile I thought it was the aspartame. But later I found that I could drink regular diet Mtn Dew without the same effect! After some comparison between them, it turns out Red #40 is my issue. I confirmed with some other foods.
It takes investigation sometimes But probably not all "grains" or "carbs" would do that to you (but could be). If you really want to know, would have to experiment. On the other hand, if you enjoy keto and can keep it up for life, dont even worry about it - lesson learned5 -
This may not be directly related to your knee issue, but I see an effect from that type of eating within minutes as a type 1 diabetic who uses this WOE for BG management (among other reasons). And I would feel lethargic and just not generally very good within hours.6

Yes, my reactions to inflammatory foods happen quickly, anywhere from 4-48 hours after eating it.
Potatoes are part of the nightshade family of foods, along with eggplant, peppers, paprika, and other spices. Many people have an inflammatory reaction to nightshades. The flavorings in salt and vinegar chips are often corn-based (at least the brands around me are) and corn is a common food that triggers inflammation, too.1 -
About 2 1/2 weeks into keto diet I tried a propel drink, it was crazy almost sickening sweet. I could only drink half of it. It was my first attempt at outside sugar/sugar free on the diet. Within half an hour I got my only headache on this WOE. It was sudden and very uncomfortable for a few hours. I was just surprised it would have such a quick negative response. (Last year I was one of those diet soda people.) You better believe when I add sugar substitutes back in it will be in very small proportions and with care and not for a while.1

Bloat. Within a half-hour of eating, I feel uncomfortable, stuffed, bloated and distinctly pee'd off.
It's only happened once.

Sugar starts getting digested/absorbed in your mouth, it is very quickly handled by our body. This doesn't surprise me at all.0
