What are your quick and easy "go to" meals?

When I need a quick and easy meal that requires little thought and effort, I go for a Jenny-O All White Meat Turkey burger and a small box of frozen veggies (one of my favorites is Green Giant Steamers, Green Beans with Almonds). The turkey burger goes in my mini cast iron skillet while the veggies go in the microwave. Five minutes later, my meal is ready. It is balanced and satisfying (unlike a lot of other quick & easy options), and also flexible. There are so many new frozen veggie options now, that it is easy to find something that will work well and still keep it interesting. They are often BOGO at my local grocery store, and when they are I stock up the freezer. Same goes for the turkey burgers. And if turkey burgers aren't your thing, Tyson's Grilled and Ready Chicken breasts are great too!

Green Giant Steamers, Green Beans w/Almonds - 120 calories, 3 grams protein (for the whole box!)

    We have chickens, so I use eggs.
    3 eggs, chop up fresh kale, onion, banana peppers from the garden, 2 T half & half, stir fry in skillet - wonderful!
