Ham hock...?

One of my friends raises pigs (lovely pasture-raised, all named and loved) and I just got a gorgeous pork freezer package. It included a large, meaty ham hock. Last time I got one of these, I made a bean soup and the flavor of that hock and all the meat off of it would have brought tears of joy to your eyes. So I want to do something amazing with it, but clearly a bean soup is no longer a wise choice. Tell me something I can do with this hock that allows the flavor to shine, but is still low carb? Easy is key as I am a terrible cook. Crockpot would be awesome, or at least something where I can throw stuff in a pot on the stove and just let it simmer.

    I would turn it into chili...like real chili, with no beans, just beef and pork and peppers and onions and maybe mushrooms...

    Barley is a better option than rice, to create a resistant starch meal... boil barley, drain, cool and refrigerate overnight. The following day, add to any stew or hotpot, about 15 minutes form the end of cooking to heat through. Delicious!!

    I'm not sure how much meat you have; but when I have a pork shank, I cook it on the grill and then eat the meat off of the bones just like I would do with a turkey leg.
