Squash & cheese bake. I generally bake mine until the cheese on top and bubbly & browned a tad, but this recipe is prepared stove top. This is my family's favorite side at Thanksgiving so I'm glad it's LC. Great for the Mac n cheese lovers.

I don't have a link to the recipe but I found it on xxketo and it has been a staple for me right now and I could see it being awesome at holidays. It's pretty much creamed sausage with zucchini. Here's what I use!
- 1 lb pork sausage
- 1/2 block philadelphia cream cheese
- 1-2 large zucchinis, sliced thin
- 1/2 tbsp (or more) ground sage, can also use fresh
- poultry seasoning
- chicken broth or bone broth
- Brown the sausage.
- Add broth, zucchini, and seasonings to taste. Really cook the zucchini down.
- Once the zucchini is cooked to your liking melt the cream cheese and meld the dish together.
I usually season every step. I put a lot of sage in this dish. It reminds me a bit of stuffing but just the good stuff.4 -
A tradition in our family is to have homemade pumpkin bread and homemade zucchini bread while we watch the Thanksgiving Day parade in place of a big breakfast so that we have room for a big Thanksgiving dinner. Therefore, I'm looking for alternative low-carb breakfast treats. I found this Low-Carb Pumpkin-Cream Cheese Muffins recipe that looks yummy. I may try making it before the holiday

I halved the sugar in the crust and used 1/3C pecans and it was amazing. I considered adding another 4oz of cream cheese just for more of the cheesecake goodness but haven't tried that yet. Even my sugar burner coworker loved it.1
