Currently living in a hotel. I have a cooktop and a microwave.
I need healthy meal ideas using these 2 appliances. I prefer not to fry anything because of it being a hotel room.

Everything. Panbroil meat, steam veggies in microwave.
If you have a fridge, make twice as much meat, microwave half to warm tomorrow while you fry, sauté or boil veggies.
Love fried squash, fry 1 onion, 3 or 4 yellow summer squash or zucchini for tonight. Tomorrow put some on plate, top with cheese,
Heat in microwave. Next day put the rest on plate, top with seasoned breadcrumbs, dot with tiny amount of butter, heat.
Love it all 3 ways, doesn't taste like leftovers, has a different taste.
You can even make a pot roast on a stove top, takes forever, but it can work.

My oven was broken for awhile and I had to wait for parts. You can get creative with microwaves, just find foods you like and reconfigure the recipes for microwaves. One of the things we liked was to cook spaghetti squash in the microwave, then on the stove top make or use store bought marina sauce, adding things like cubed chunks of turkey kielbasa, or cooked ground turkey burger (precooked in the microwave first), rings of onions, bits of fresh or frozen kale. Then scrape around some of the spaghetti squash so it is loose, keep it in the squash shell (like a bowl), spoon the sauce over it, top with shredded mozzarella or parmesan cheese and microwave again briefly to melt the cheese.

vegtable fajhitas in the crockput just put in the onions, mushrooms and peppers with a bit of fry light and once theyre brown (have the pot on high) add spices to taste or a fajhita packet mix. you can even make them into burritos by getting one of those rice micro uncle ben packets. salad also
