Dedicated in December??

Mihani, I don't think we have a Fresh Thyme store here in San Antonio. We have a nice grocery store called Sprouts but they are a little pricier than Trader Joes. Plus Whole Foods, Whole Paycheck
The cookies are almost gone. Our visitor's teenage daughter who is very skinny loves them. I encouraged her to eat them. I had a great lunch and dinner and then had two more cookies. They are pecan Mexican wedding cookies or some people call them Pecan Sandies. They were my mother's favorite xmas cookie. I made a batch for my oldest sister and her family. It is a comfort cookie. Plus Texas pecans are amazing. I found 2 lbs of giant pecans for $15.00 at the big grocery store. I decided that I would immediately get back on with healthy lunch and dinner. I made the OSG vegan chili and it is delicious. Did not add yogurt or sour cream.
OMG...we just found out there is an opening in England fall 2018 if my hubby wants to apply.0 -
I love those cookies too, Donna. I used to make them for my dad, those and peanut butter cookies were his favorites. I seem to recall my recipe used walnuts though. Those would be hard to make into a healthy version. The butter is what makes them so good, and vegan butter isn't any better for you. So you would be moving to England? Your life is very adventurous! I love that chili recipe, glad you enjoyed it.
Today I'm going to do a lot of laundry catch up (sheets and towels and blankets), de-pet-hair the floors, wrap presents, then work on the files I brought home until time to go to Christmas Eve dinner.

Those pecan cookies are my favorites, too! My aunt always makes them for Christmas and special occasions, but I haven't seen her so haven't succumbed to the temptation. I had a mountain of my MIL's cookies though.
Donna, that's interesting about a position available in England! I bet that is pretty tempting, especially if you're not particularly fond of where you're living right now. Is there any way to know how long you'd be living there for if you guys go for it?
We don't have Fresh Thyme stores near us. We have an excellent local co-op that has all local and organic produce and a good selection of vegan options, and more recently, a Whole Foods. Now that we've moved, they are both a 30 to 40 minute drive away from us, each way, and we don't go often.
I'll be off plan tonight and tomorrow. After that, I'll be gearing up for my reboot that starts Jan 2. Mixed feelings about that, but I'm mostly excited!
Merry Christmas you guys!0 -
Mihani - I made them with walnuts when I lived other places and even used almonds. They tasted just as good. I love buying local foods so having Texas pecans is great. There is an amazing difference between fresh and store bought. My friend here has a pecan dealer she buys from every year.
Well, despite the cookies I was down today!!! My December goal was to either maintain or go for a 4 lb weight loss this month. I am down 2 lbs before trip!! I think it was getting back on track for lunch & dinner yesterday and not let one slip up rule the day. Cookies for breakfast was my bad habit.
I don't know if we will get England or not. They are looking for an Anesthetist to volunteer asap starting next summer. Brooks had trauma call last night and I emailed him to apply and he did!!!!!! I would put the house up for rent, move my favorite things into private storage, get rid of more stuff...if the house rented out we could stay with my friends who just bought a big house that are staying with us. They are moving out today. I have another friend coming from Italy in June who is planning on building a house and might rent our house!!!

I'm excited for you starting the meal plan, Carla! Sometimes it really helps to just have a new focus/motivation. Donna, excellent work having a loss even with vacation and the holiday season!
I got up super early even though I don't have a lot to do. Going to make the chocolate pumpkin pie and wrap presents. Probably do a little bit of work since I don't have anywhere to be until 12:30.

MERRY CHRISTMAS!
We had friends for brunch. Brooks made a dutch apple pancake, scrambled eggs with vegetables, brussel sprouts with pecans and cut up fruit. I skipped the pancake. After the brunch we had a long walk on the San Antonio Riverwalk. Now by fireplace. Hope you all have a healthy and happy holidays.

Had a nice Christmas here. Hope you all did too.

Cute pups! I like their lit up collars. England is one of the places I'd be happy to live for a few years. Fingers crossed for you guys!
We spend Christmas Eve at my parents, along with my brother, SIL, niece and nephews. It was really noisy, but good. I'm glad we decided to go. After we opening gifts in the morning and had breakfast with them, we got towed backwards up the driveway by my dad on his tractor. Country life! Next time we'll bring our 4WD. Joe had looked at the forecast for their area, but although the town itself didn't have a forecast of snow, my parents are 10 minutes from town and it is all uphill. We woke up to a white Christmas. It was quite lovely, the snow falling while we were sipping our morning coffee and opening gifts.
Joe is back to work today and suddenly Christmas is over. I like it better in BC where the day after Christmas is also a day off. A little cushion between Christmas and getting back to the routine.
Joe and I moved the treadmill from my art studio out into the shop so that I can start using it again. I dusted it off and it is ready to go.

Good Morning!
Carla - How is the treadmill workouts going? I think walking is the best exercise. When I lived in CO I use to love snowshoeing with the dogs. I had big dogs at the time. On the weekends ski areas were too packed to get very many runs in.
I bought Farro for the first time yesterday. Not sure what I am going to do with the Farro. Brooks had a delicious salad at Zoes yesterday with Farro in it. He likes is better than quinoa.
We bought a lot of veggies that I need to prep and then clean house after walking dogs. I was going to make my roasted soup today but forgot to buy leeks.
We went to the gym as it was raining all day. I did the spin bike and then lifted very light weights...I tried the adductor, abductor, flexor and extension machines on my hip... able to go through all range of motion with the hip... so weird..hip pain is about the same.
Mihani - are you working this week? I hope you caught a good break.
Karrie - how was Xmas in the new house?
I am scared we will get England and scared we won't...I think about all the effort of packing stuff for an overseas assignment....but I learned what to do and not to do. Yikes. If we did get it we would be out of here before the 110* weather.
I have 0.2 lbs to go until the end of the month (4days) to reach an easy goal. The goal for the month was to either maintain or lose 4 lbs. I just did not want to gain. Thinking about January goals...0 -
Hey y'all... the final push is on to get all the end of year projects finished so this is a fly-by! May not check back in until the weekend.1

Sounds like your goal for weight loss is in the bag for this month, Donna! Nice work, especially at this time of year. It is such a great boost to start a new year already on track!
Mihani, best of luck with those year end deadlines!
I haven't been on the treadmill yet, and am still having a cup of coffee every morning. The first week of the reboot is going to be rough! Starting everything Jan. 2.0 -
Carla - are you giving up your morning cup of Joe??? Serious reboot. I could not give up my morning cappuccino. There are plenty of things I can give up (meat, oils, cheese, yogurt, cookies & cakes) but not my coffee. I guess I could but someone might get hurt and I would not want to risk that.
I am trying...0.2 lbs does not sounds like much but you never know with the scales, salt intake, how the stars line up...Brooks wants to swim tomorrow and for some reason my weight goes up a day or two after swimming....not sure why. So if I hit my goal tomorrow I am going to call it good and not weigh until after NYs.
One of the interesting things about living in San Antonio...when it is down to the 40's hardly anyone is in the park. It is quiet and beautiful. We can let Cleo, my black schnauzer off leash for a good run. Yesterday it was in the high 30's. I was dressed for Canada weather...way overdressed.
Mihani - good luck getting everything done by the end of the year.0 -
I like farro Donna... I bookmarked this recipe a while back but haven't tried it yet: http://www.foodandwine.com/recipes/farro-salad-winter-fruit-pistachios-and-ginger
You've done a great job with maintaining through vacation and the holidays. Hope you get your 4 pound goal for the month, but even if you don't I'm very impressed!
Carla, I've started drinking the Yogi brand Vital Energy Mint tea, just one cup then I switch to herbal. So I get a little caffeine, and it makes me feel better than coffee does.
I feel fairly confident I covered all the deadlines for end of year. Still a ton of work to do though. I let all the day to day tasks fall behind while I concentrated on bigger projects so I'm buried in paper at the office. I planned to go in today and tomorrow and work from home Monday, but I may switch my at home day to today since we got a couple inches of snow and I don't know how the roads are.
Anyone have big plans for New Year's Eve? I was never much of a NYE party person. My brother and I are going to do dinner and a movie at his place. I'll be home in bed by 10 p.m.

Happy NY! I did not reach my 4 lb weight loss goal for the month BUT I set a goal earlier in the month of either maintaining for the month or 4 lb loss. We had a great 2 week vacation where I did not gain weight and then when we came back I lost 3.5 lbs....so close. Now I have to figure out some goals for the next year. No hard and fast resolutions to give up anything but fat, just sustainable goals. I think I will aim for 4-5 lbs/month. He has lost more weight with not really trying that hard. He is 9 lbs away from his goal. We are staying in this evening and chilling. Will probably have Prosecco. Going to go take dogs for a long walk today.
Mihani - Thank you for the Farro recipe. I am going to try it later this week. I love the Yogi teas. Good job getting the end of year deadlines done.
Carla - you can do the reboot! There is something about the first of the Year that is a great time for renewal.
Tomorrow, we are signed up for a 15 mile NY's day bike ride in a.m. and then 2.5 hours tennis in afternoon. Yikes. Hope I survive. There is a bike ride in Febuary called the Jalapeño bike ride. I am going to do the 25 mile ride and Brooks will either ride 62.5 or 100 miles.

Went to the office for a while, need to put in a longer day tomorrow. Going to my brother's for movie and tacos tonight, yum! I will have a glass of wine with dinner, but that will be my limit since I'm driving. All set to get back on track tomorrow. I have oatmeal, frozen berries, chia seeds and walnuts for breakfasts. Lunches will be a Dr. McD soup or a bag of steamer veggies with an apple or other fruit. Dinners are going to be frozen Amy's for the next week. I'm too busy with work to think about shopping and cooking, but I will do some batch cooking next weekend. I'm going to spend some time this week going through my cookbooks and deciding what I can make that will freeze well for weeknight dinners. I'd like to try a couple things from the Vegan Richa cookbook.
Wow Donna... that's a great way to start the New Year!
Happy New Year all.
