Anyone care to check out my diary and critique it?
I get the stall. But Last week I gained a pound and I gained a pound this morning. Um not quite the direction I hoped to go.

If you gain a pound overnight, it's definitely water and not "real".

100% true.
You look like you are getting substantial exercise counts. Exercise and soreness can cause temporary water weight gain.
Hormone fluctuations can cause water weight gain. I always do during my cycle. Blurgh.
And sometimes the body holds on to water for unknown reasons. The body fills fat cells temporarily as a placeholder for awhile sometimes until it determines they won't be refilled.
Give it more time.
Stalls are 4 weeks of no positive change. Either in measurements or scale. Have you been keeping measurements? I find that often, when the scale isn't moving for a couple weeks, there will be change in measurements instead.

When I ate "strict keto" I weighed and measures foods because so much of it was packed with calories, generally speaking. I question entries like "12 pieces of hard salami", "generic deviled eggs" (6 halves), "Greek Salad-1 serving". Additionally...per your diary... though you do have 2 days of eating only ~600 calories last week you also have ~1900 (or maybe it was 1600??) over your goal when added up. Could be nothing.
I really have no suggestions except you may be eating more than you think...or it could be hormones, you didn't breathe, defecate, urinate or perspire as much as other days. You appear to be getting some exercise. Maybe you have a little water retention due to tiny muscle tears/use beyond your normal. Maybe it's related to hormones? Are you female? T.O.M?
Weight fluctuates normally. That's just what it does. Maybe you'll have a "whoosh" tomorrow. Try using something like Trendweight (website) or apps like Happy Scale (Iphone) or Libra (android) to learn about and learn to accept your normal weight fluctuations.
I never had a food scale when I lost weight but I was eating a lot of vegetables. It really didn't matter much whether I entered 2 cups of raw spinach when it was actually 4, cuz so low calories. When I switched to my keto trial (for reason other than weight loss), a food scale confirmed my "serving of peanut butter" was far more than a serving since it looked like this:
