Can also be made dairy-free/lower calorie by substituting applesauce for butter and almond milk for buttermilk. Also, chopped walnuts are a great addition!

Here are some of my favorites:

Ginger-cilantro dressing (from The Elimination Diet Cookbook which I'm using right now) https://www.amazon.com/Elimination-Diet-Discover-Making-Tired/dp/1455581887
1/3 cup extra virgin olive oil
3 tbsp raw coconut vinegar
1 to 2 tsp of raw honey or maple syrup
1 (2 inch) piece of fresh ginger
1 to 2 garlic cloves (optional)
1/2 tsp salt
small handful of fresh cilantro
Toss it all into a blender and blend! It doesn't make a lot of dressing, but I put it on top of anything that needs a little extra flavor (grilled chicken or sautéed veggies or salad of course).

1/3 cup sesame seeds
1/2 cup chopped celery
3-4 tbsp chopped fresh ginger
1/2 cup extra virgin olive oil
3 tbsp brown rice vinegar or coconut vinegar
3 tbsp wheat-free tamari or coconut aminos
2 tbsp water
1 tbsp pure maple syrup
1/8 tsp ground white ginger
Heat skillet over medium-low heat and add sesame seeds to dry roast for a few minutes. Keep seeds moving in skillet to prevent burning. Remove from heat and place seeds and all other ingredients in a blender. Blend on high until smooth and creamy.
Goes great for cabbage like salads as it tends to be thicker. Great on veggies, chicken, etc. to add some added flavor.0 -

I have as a goal to try a new recipe each week ... so here is a list of what I have been trying lately:
Zucchini Cannelloni: I changed the recipe a bit ... for the filling I mixed ricotta and goat cheese + before I put together the cannelloni I grilled the zucchini a bit.

Lemon Chia Muffins: delicious and very lemony .. perfect for a snack since I made them in a mini muffin pan, so got like 36.

Fudgy Brownies: delicious, but I would suggest either to use less chocolate or just 70% if not is way too much chocolate ... perfect with ice cream, so maybe if you have halo top or similar would go great for a dessert. Also did them in a mini muffin pan so to not go overboard with the calories in each

Instapot people! Making hard boiled eggs is a snap! Each week, i will cool and peel a dozen to leave in the fridge for me and my adult family. Put them on the rack, add about 1.5 c water and cook (manual pressure for 6 min). Use quick pressure release and plunge them into cold water. They peel so easily! It’s so fast and easy - I often do this in the mornings before work. Then the eggs are ready for a quick, high protein snack or made into a sandwich/salad.1
