Keto Vegetarian Ideas?

Is anyone on this thread dabbling in working meatless meals into their dinner roatation? I don't eat beef, pork... really anything that walks on four legs. This leaves me with chicken, turkey and eggs for protein. I could eat eggs forever, but I'm getting real tired of eating birds. I've found a few meatless keto reciepies that I like, but would love suggestions that go beyond the frittata!

Fish. Fish do not have legs or do you also not eat anything that swims?
If you eat chicken, turkey and eggs, how about dairy? Greek yogurt and cottage cheese are 2 sources of protein for me. Last night I made buffalo wings for my husband and I had canned tuna over a salad since I'm not fond of chicken skin.

I frequently have avocado and cottage cheese for lunch (assuming you do dairy).
Salads with eggs and cheese are another favorite.
I like to make a cheese pizza with canned chicken as the crust.

It's a nice way to sneak in the chicken because the texture is not like regular chicken.1 -

I've seen lots of pizza crust recipies, but never with chicken. I tried cauliflower crust, but I think my expectations were not in allignement with reality I may have to give that one a try!

Nuts, seeds and nut/seed butters can also be a good source of protein. Cheese is also a good source of protein and there are so many kinds. Quark, for example, is a creamy cheese which can easily be subbed for yogurt.0

If you are not against faux processed vegan meats there are plenty out there with a fairly low carb count. Gardein and Field Roast tend to have the better tasting ones but I also go for Boca Burgers now and then. Tofurky has some decent deli slice options as well. They go from tofu based to seitan and combinations of the two. I think Beyond Meat is mostly Pea Protein and its OK but not my favorite. Just read the nutrition labels before you buy. I know a lot of people who make their own seitan but it seems like a lot of work. If you are still eating eggs Morning Star farms and Quorn can be found at most grocery stores and they have some decent options as well. There are also different options for tofu (soft, firm, extra firm) I don't use soft often but will use extra firm in a stir fry, I just make sure to buy organic. I will use Vegenaise and Better than Cream Cheese in sauces since they are fairly low in carbs as well. One of my favorite meals is fettuccine miracle noodles, Boca crumbles, green chile, and Better than Cream Cheese with either kosher salt or liquid aminos.
I tend to mix whatever vegan protein I have at home with a salad and include pecans or almonds as well. Not all vegan faux meats are low carb though. There are some that are grain based that have quite a few carbs and there are others that are breaded.

You can add dairy and eggs to the vegan recipes if you are an ovo-lacto-veg, but it's worth a look to see if they have any neat ideas to incorporate.

Holy cr*p baconslave... you did some homework! I'll have to bookmark those sites. I found a few books on Amazon, but the recipes seem to rely heavily on egg-centered dishes, which I don't mind, but would be nice to see something more creative. I love cooking and don't mind putting extra work into making my food.

Second this! It cooks up nice and crispy. You can make a few and freeze them too. Any leftover poultry works, doesn’t have to be canned.0
