I get in a meal rut. I'm always on the lookout for simple healthy meals.
What did you have last night for dinner?
I had a big bowl of homemade lentil soup with vegetables and a side of steamed asparagus. Asparagus is surprisingly cheap right now and my favorite vegetable.

I was on my own for dinner last night, so I ate a Healthy Choice frozen dinner, a small portion of leftover authentic ramen (NOT like Top Ramen), and a Dannon Greek yogurt.0

I haven't been to McDonald's since before Christmas and I've been CRAVING McD's for the past several days. Last night I gave in to the craving and had a double cheeseburger (plain), medium fries, and an iced tea.
On Wednesday night, I went out to dinner with a friend who shares a February birthday. That was BBQ, cole slaw, and hush puppies. There were green beans on the plate too, but they were horrible so I left them.
Both of those nights showed up on the scale this morning. But the good thing about tracking <sigh> is that I looked at my food tracker from the past two days and knew WHY my weight was up this morning.2 -
I've been in a rut for 7 months with my DD and her kids living here, but they moved out last weekend and I'm cooking again. Here's what I've done this week and what's to come:
Taco meat, eaten in shells and on salad.
Chuck roast, potatoes, and carrots in a crock-pot, seasoned with beef boullion, italian seasoning, and a packet of ranch.
Burgers on the grill w/BBQ chips, white and black bean salad, and roasted brussel sprouts.
Steak, roasted potatoes, and salad
Salad w/ deli turkey, hard cooked egg, blue cheese, bacon bits, and topped w/chipotle lime dressing.
Turkey breast, mashed potatoes, FF gravy, and butternut squash.

Tonight was convection oven "fried" frenched potatoes, wax beans, broccoli, and baked salmon filet.0

Roasted chicken with mushrooms and a little Stubbs BBQ sauce and pan-(lightly) fried zuchinni. Jello and a little whipped cream later in the evening.
By the by, have recently gotten into the rave 2-ingredient "bread" or "bagels", adding a third ingredient: kalamata olives. Toast a half of that with 2 oz. of avocado, top with a little Sriracha. A real healthy and tasty treat that keeps me feeling full for several hours!1 -

It was one of those days. Fortunately the bag (Valentine’s day M and M’s) was nearly empty by the time I got to it.
Dessert was a Lindt hazelnut truffle.

@minimyzeme I've been wanting to try those "bagels". Need to buy some self-rising flour. Yes, I know I could use all-purpose flour and just add some baking powder. Or is it baking soda? And how much? See the problem here? LOL0 -
Dinner last night was at a pizza place. I'm allergic to gluten and casein, so no pizza for me. (It smelled soooooo good.) I had a spinach salad with shrimp. The shrimp weren't seasoned at all. This reminded me that shrimp are easy to cook and easy to season so I should make them more often. Ina Garten's Shrimp Salad is delicious if you use about 1/3 of the mayo called for.
Earlier in the week, I made pork loin roast, a big pot of chicken vegetable soup and chicken salad with toasted pecans. I made a chicken artichoke bake that I couldn't eat because of dairy, but I'll bet that dish could be modified to be point friendly and tasty using yogurt and low-fat cottage cheese instead of mayo and sour cream (or less of those.) I made it for others, so I wasn't worried about points. I may experiment next time.0 -
@beachwoman2006 , I can't take credit for actually making the 'bagels'. My partner did using the all-purpose and adding 1/2 teaspoon of each baking powder and soda. She says the two of them work with the flour to make the dough rise.
She also said she can prep the dough in about 15 minutes compared to the hours traditional bread takes.
I don't know where avocado bread or toast has been hiding all my life but I've found my new love...0 -
Last night we went to a local chain place for dinner with our two sons and our daughter and her DH. Very enjoyable. Had a couples of nibbles in the app sampler, a Greek salad, and a filet mignon. Not too bad, except for the 4 beers.0

last night was a can of turkey chili and steamed vegetables. I did a fast 4 mile walk into town and then watched a parade. I was pooped.0
