One of the many documentaries that we have watched, but that really struck home with us (after, like so many others out there, we had tried other diets and failed to see results) was this guy, Dr. Jason Fung. See his website for some great information, and I am linking to the page that details the 36-42 hour fasting which is where my husband and I are at skipping eating on M-W-F and eating in about an eight hour window starting at 11am T-Th-Sa (and Sunday).
