Potassium
-Spinach: I like to wilt a few handfuls of spinach into every pasta dish I make.
-Salmon: I usually bake salmon with lemon and butter, but if I’m feeling froggy, sometimes I’ll top it with a bit of chorizo.
Vitamin A
-Sweet potato: Roasted sweet potatoes are vegetable candy, and 1lb potato nets more than 8x the daily requirement.
-Carrot: Shredded carrot is easy to sneak in for extra veggies.
Vitamin C
-Parsley: I was surprised to learn this is high in Vitamin C. I mostly add it for color.
-Lemons: I add lemon juice to recipes all the time.
Calcium
-Luna bars: I eat one every weekday for breakfast, and My Fitness Pal loves to remind me they are high in Calcium.
-Cheese: Any kind and all the time.
Iron
-Chicken: 4/5 times I’m eating meat, it’s chicken.
-Quinoa: When I need a rice-like side but am tired of rice.0
