I have Celiac disease and can't have any gluten and am tired of the same old things. Anyone have great recipes??

My go to is pintrest. I love to bake for my family and have found that King Arthur has a cup
for cup gluten free flour. So you don't have to try and figure out how to replace regular flour in a recipe.0 -
I'm 57 and have been a vegetarian for 36 years....10 years ago I was diagnosed with Celiac's disease. Finding food to eat was a challenge in the beginning, to be sure.

I find a lot of good recipes on Skinnytatse.com. Her recipes are not all GF, but many of them are or can easily be adapted to be GF. I have long ago quit trying to make things that are usually full of gluten taste good by making them GF. Instead, I stick to things that are naturally GF, such as rice, potato, cornmeal or quinoa based dishes, or simply meats and vegetables. I grind up GF crackers as a sub for breadcrumbs in meatballs and meatloaf because it doesn't have a huge impact on the overall texture of the meal. I make enchiladas using corn tortillas. I make a lot of soups and stews. Traditional spoonbread is a great substitute for cornbread that is made using cornmeal, milk, eggs and butter. I make dishes like jambalaya, shrimp and grits, and Thai or Indian curries over rice. I make cheese steaks for my husband and eat mine on a baked potato or roasted portabello mushroom. For pasta I use spaghetti squash or sometimes I resort to GF pasta. I have found the corn or quinoa based pastas retain their texture the best, but I haven't found any GF pasta that tastes good re-heated. I also make risotto (arborio rice) quite often. Oh, and I also make a lot of frittatas and omelets. And sweet potato hash with tons of vegetables and a fried egg on top. Hope some of this helps.0

I make these cheese breads with yucca flour (tapioca flour). They're delicious!!! They are supposed to be rolled by hand into small balls before baking but i like to use a muffin baking tray and pour the dough there. They come out muffin shaped and they're a perfect snack. In my house we have them with coffee or tea. They're gluten free but not low carb.

Another member MsEducation83 posted these suggestions on the thread for low carb lunches. I think most if not all of them are gluten free. I tried the eggrolls in a bowl and we REALLY liked it.
