Pumpinks seeds

Now that Halloween is just around the corner and i am about to crave out the pumkings with my kids, i thought i might roast the seeds to eat as my Halloween treat. And make some pumpinks muffin with the pumpkin puree. Anyone got a recipe for a friendly low carb muffins.

    Geniuskitchen.com has a one minute flax muffin that is very simple and you can tweak it with whatever flavours/nuts/berries you want. One reviewer even changed the recipe a bit to press out on parchment for a personal size pizza crust.
