Keto Friendly Cheese Biscuits

I found this recipe for a keto biscuit on Copy Me That, and gave it a try last night (I've been experimenting with keto friendly baked goods for the last couple of weeks) and this one is pretty damn good...I made it as written, and then made a second batch with a few tweaks, which I will note below in parenthesis:
Ingredients
½ c Cheddar Cheese - shredded
¼ c Mozzarella - shredded (skip the mozz)
¼ c Parmesan - shredded (1/2 c...the texture was better, carbs a bit lower, and had a bit more "bite")
2 eggs
½ c Almond flour (my almond flour isn't super finely ground, so I reground it til it was more powdery...there was a bit more texture in the final product than I would normally like the first time around)
½ tsp baking powder
(pinch of pink salt)
(1/2 tsp garlic powder)
(1/2 tsp dried parsley)
Steps
Preheat oven to 400
Add the eggs to a large bowl and whisk until lightly beaten
Add the remaining ingredients and mix well.
Divide into 4, 6 or 8 sections.
Roll each section into a ball (and flatten a little) and place on a baking sheet lined with parchment or a silpat. (Brush with melted butter)
Bake for 12 minutes or until golden brown.
Notes (as mentioned above, the carbs are a bit lower when you skip the mozz):
4 - thick biscuits- 2.3g net carbs/biscuit
6 - thin biscuits - 1.7g net carbs/biscuit
8 - mini biscuits - 1.15g net carbs/biscuit
