There is a Pennsylvania Dutch Pickled Egg recipe on allrecipes.com that is basically how I make mine except I use artificial sweetener vs sugar. I guess you could leave the beets out but and just use the juice but I eat beets. They're not too high carb for me and i love pickled beets. I add cloves like the recipe but have not added a bay leaf.
My Dad always had a big jar of homemade pickled eggs and beets for me everytime I came for the holidays or other visits.0 -
I just plop hardboiled eggs into a kosher dill jar with no pickles left, lol3

@nicsflyingcircus -that's what I do, too! I reuse the juice to pickle red onions, mini cucumbers, eggs, carrots, and fresh green beans, too.0
