I've asked this before - anybody have a good pickled egg recipe?

    There is a Pennsylvania Dutch Pickled Egg recipe on allrecipes.com that is basically how I make mine except I use artificial sweetener vs sugar. I guess you could leave the beets out but and just use the juice but I eat beets. They're not too high carb for me and i love pickled beets. I add cloves like the recipe but have not added a bay leaf.

    My Dad always had a big jar of homemade pickled eggs and beets for me everytime I came for the holidays or other visits. <3

    I just plop hardboiled eggs into a kosher dill jar with no pickles left, lol

    @nicsflyingcircus -that's what I do, too! I reuse the juice to pickle red onions, mini cucumbers, eggs, carrots, and fresh green beans, too.

    It's also good for marinating chicken breasts.

    It's all a brine, or some offshoot of it.

    Pickle juice is a great source of extra sodium. I just sip at it....
