Phase 1 egg soufflé

Just layer your veggies/meats/cheese of choice into an oven safe dish and poor beaten eggs over the top. Bake at 375 until puffed and golden brown. This one has:
Mushrooms
Green onion
Deli ham
Red bell pepper
Spinach
Grape tomato
Goat cheese
Low-fat mozzarella
Cilantro
A little low-fat sour cream on top (I found this really wasn’t necessary as the goat cheese adds so much flavor and creamyness)
It was really good and quite filling! ☺️
