Comfort food

This cold MI weather is not supposed to improve any time soon, a -48 wind chill is forecasted for tomorrow. This weather makes me want eat, specifically comfort food.

Besides 0 point veg soup, what is your go to, diet friendly, comfort food?

    I know you said besides, but our version of zero pt soup was substantially comforting. We started with the zero basics. But the way DW made it, it was more like stew.

    Then we would pre cook brown rice and grilled chicken. At dinner time I would measure out some rice and grilled chicken, mix it into the soup and microwave. Season as you choose. Top with some Parmesan cheese.

    Counting calories, 100 cals for chicken, 100 cals for rice, 1 cup of soup, 35 calories, count the cheese. For 250 calories, it’s a lot of food. It’s hot, and filling. I got through quite a few Chicago winters on this stuff.

    I do like hot soup but not really into traditional "comfort food". I could always add chicken to the veggie soup to make it more of a meal.

    I also like vegetarian chili and cornbread. Hummus is another thing I enjoy that is pretty low in calories.

    My wife makes a great vegetarian chili, and then serves it over a baked potato with a little bit of shredded cheese. It feels very decadent and filling, but it's not that many calories!

    I'm thinking I'll make a pot of 10 can chili and serve it over baked potato with cheese when I want to switch it up (since it makes so much). And I only said not zero point soup because I just finished a big batch, but I forgot about adding chicken to it, and topping with Parmesan reminded me of a favorite of my own, Pizza soup, not really pizza like, but definitely an Italian spin.

    Thanks so much for the idea guys. I was in a serious slump!

    I do enjoy plain old vegetable soup.
