Wow. This is an amazing article by Amy Berger of Tuit Nutrition on what insulin's main role is in the body and how almost everyone, including me, does not quite understand what it actually does. I HIGHLY recommend reading this!

Thanks for the broader understanding of insulin article.
The more I study the more I understand how much of my understanding is based on false or teachings that were not well understood by the teacher. This is not just a health care issue either.0 -
One of the biggest challenges for low carbers /keto-ers that I observe is the lack of understanding about body fat. So much focus is placed on insulin's role in creating body fat from glucose. Yet everyone conveniently forgets that dietary fat can re-esterify into body fat without insulin in a simpler process.
The result is that a myth exists among some people who are trying to lose weight with low carb / keto... the myth that they need to add dietary fat to everything.
MFP is usually pretty good, but I see this type of question other places constantly:
"I am not losing and don't understand why. I keep increasing fat and I'm eating 10K calories in fat everyday, but no matter how much fat I add to food, I don't lose weight! How can I increase my fat intake more?"
(Ok, normally the calorie counts are not included in their post, but point is they are saying they eat a whole lot of fat.)
It is frustrating to see this, and even more frustrating when several respond suggesting to eat "fat bombs" and such.
If only people understood all of the macros and how each is used and stored by our bodies. Instead, a focus is made on carbs and insulin, but not protein or fat.3 -

The information I see out there around keto leaves me shaking my head a lot.
People will do what they want but I've never understood the regular use of fat bombs and things like bullet proof
coffee. I have a fat bomb: It's on my body ready to be used in body fat through IF and limiting fat intake a few times a week once fat adapted. Plenty of calories on the stomach that can go.
I look at bullet proof coffee the same way I do a Coca Cola: Would I drink 65 grams of sugar? Nope. So why would I want to drink my fat?7 -

I guess I use these two as my food choices. There not the ideal choice of food but there also not my staple on my diet. They should be treated as a treat in my opinion. Should you eat 12 fat bombs and 2 bullet proof coffees everyday ...no lol. But you probably shouldnt be eating 18 eggs and a steak everyday either. On the other hand though the first two choices are better than having 14 Reese's Peanut Butter eggs and two coca colas. Whole foods is ALWAYS the goal.

My world is full of choices and I'd much rather get a little fat from a "fat bomb" made of cocoa, almonds and coconut which is held together by a little coconut oil than eat chicken skin or that loose fat on a ribeye.The information I see out there around keto leaves me shaking my head a lot.

LOL. I know. Most (definitely not all) people I know in the real world love it or at least don't mind it. It's just not for me.1 -
I agree @kpk54... chunks of fat on meat make me puke. I only ever order tenderloin if I'm getting a steak in a restaurant because of that. Even bacon must be the leanest I can find and cooked till all is crispy.2

Biggest trouble with the fat is that it needs to be heated longer than the lean part. I like the lean part cooked Blue. I like the fat best when it is just warm enough to be softened, but not so much that it is melting.0

I've got pretty good at getting my ribeyes and other steaks cooked like that, but it takes practice. I preheat my cast iron pans in the oven till they're super hot and then put them on the stove. A good set of tongs and a timer and I can sear the edges to get the fat just right without over cooking the rest of the steak.

Ooof. I can't do crunchy bacon, but to each their own. I like mine al dente, right on the verge of being crispy but still a bit chewy. I do mine in the oven on a foil lined pan and occasionally save the grease to keep for maintaining my cast iron pans.
1
