Wanting Curry

Anyone have a good low carb curry or tikki masala recipe?

    I don't have a specific recipe to paste but chicken tikka or a curry to me have never been too high carb (I eat low carb versus keto). Skip the rice and the naan and go light on the tomatoes. The rest is pretty marginal in regards to carbs ( though I realize it can add up). I use Greek yogurt versus plain simply because that is what I always have on hand and it gives me a little higher protein.

    Calories have always been an issue though (for me) with most curries since I like using the canned coconut milk...and cashews. :o But really...tikka and curries are more about the spices (to me).

    I remember you from before. A foodie! I recall the conversations about butter chicken and Golden Milk/tea. Welcome back!

    One of my favorite, "in a hurry, don't feel like cooking" meals is what we refer to at home as quick curry. I use a can of coconut milk/cream, eliminating the water from the bottom and 1/2 to full jar of Thai curry paste for approximately 4 chicken breasts, cubed, plus a dash of fish sauce. If DD isn't eating, I add cauli florets right into it. If she is, then I steam the cauliflower separate to put the curry on top and she has rice.

    Adding radishes like potatoes helps add bulk and texture too. The taste isn't sharp or anything when cooked. :)

    If your carbs allow, I usually add mung bean sprouts as a base instead of rice. (I absolutely love curry and make it often).

    I haven't had any type of curry since January when I made this basic Vindaloo. Nothing special as it was pretty much sauce and chicken topped with peanuts spread on some riced cauliflower.

    This guy's curries are very popular in the keto community. He also has a keto naan recipe. I haven't tried these because I can find low carb curry simmering sauces at my local grocery. But people rave about his stuff. I use oppie bread with garlic powder added for keto naan personally.
