Healthy Potato Salad

Hey all,

I'm looking for an easy, yet healthy potato salad for a BBQ this weekend. I'm about to move so I don't have a lot of ingredients and don't really want to buy a ton of spices if I can avoid it, but I'm willing to if you can provide me with a healthy potato salad recipe :). I also don't know much about cooking so easy recipes are helpful!

    Generic - Small Red Potato (Correct), 3 Potato (3/4" to 2 3/4" dia) (170g)

    Total for the 3 potatos is 487 calories, I divide into 4 = portions at 122 calories each. The spinach dip is already spicy, so other than mix the mustard up (using spicy Dijon or something) I don't need to add other spices. Maybe a little pepper. This isn't the creamiest salad out there, but it is very low calorie, and can be easily adjusted as needed.

    Balsamic Red Potato Salad

    20 minutes (serves 10-12)


    Ingredients:

    2 lbs New Red Potatoes

    1 c Sour Cream (I used fat free plain Greek yogurt)

    ¼ c Balsamic Vinegar (I added an extra 2 tbsp because we luv vinegar)

    1 tbsp Olive Oil

    2 tsp Salt

    ½ tsp Pepper

    1 c Scallions

    1 ½ c Chopped Celery

    1 c Sliced Radishes


    Method:

    Cook potatoes in a pot of boiling salted water over medium heat, just until tender. Drain and cool.



    Balsamic Dressing:

    Whisk sour cream, balsamic vinegar, olive oil, s&p in a large bowl until blended. Cut potatoes and gently toss to coat. Add celery and radishes and gently toss to combine. Garnish salad with reserved scallions. Serve warm.



    Note: I omitted the celery and radishes because I don't care for them. Quick, simple and yummy.
