Bone soup left overs for lunch.
Dinner will be baked Chicken tenders with almond flour crust with a side of broccoli & cauliflower bake. (I'll be baking them at the same time!)0 -

Thus far today I have enjoyed a delish breakfast of eggs, feta cheese, mushrooms and spinach. Unsalted cashews for snack. Lunch was a yummy three bean salad (black beans, chickpeas and kidney beans) with avocado, tomato, cucumber, feta and a dash of lime juice. TBD on dinner!2

For breakfast I had this delicious Baked Peach Oatmeal & for dinner Unstuffed Eggroll...so good!

Maple Hill Grassmilk Whole Milk Plain Yogurt with frozen passion fruit and blueberries added.
Salad with all organic produce (arugula, grape tomatoes, cucumber, pineapple. Blue cheese. Cindy's Kitchen Balsamic dressing.
VItal Choice Salmon Burger.

Making an instant pot soup for dinner:
1 can coconut milk (I used unsweetened)
3 cups chicken bone broth
2 pounds chicken (I used tenderloin, recipe used thighs)
Juice 1 lime
Veggies (I did 1 onion, 2 green peppers, 4 carrots.... recipe calls for mushrooms)
1/2 teaspoon of each (curry powder, ground ginger, paprika, Chile powder, cinnamon)
1 teaspoon salt
Cilantro
Throw it all in instant pot for soup setting, 40 minutes.2 -
I’m boring. Chicken and broccoli 4 out of 6 meals lol Every day.1

This is a cauliflower mini-crust with a slice of cheese on top; scrambled eggs w/onions, pasta, spinach and mushrooms.

I made roasted green tomato soup today. Look it up on ‘With Food + Love’ blog. I wasn’t sure if I’d like it because green tomatoes are so tart but roasting them and blending with onions and garlic really gives them depth. I used spinach instead of kale. The color is pretty too.1

Some more. Due to make more this weekend. Going to roast vegetables and make some grains with chicken.0 -
So I made roasted spaghetti squash and topped it with beef Stroganoff and the others with roasted peppers and chicken. I also made a batch of hard boiled eggs and protein pancakes for the kids that I’m going to freeze. Good job me
