New Here - Transitioning to WFPB

Hi everyone - I'm Michelle, I hope this is an active group. I hope you don't mind if I share a little about myself. I'm 47 and work full-time. I have a supportive husband at home and my youngest daughter doesn't eat meat but loves vegetarian junk food. I hate exercise but I'm getting myself psyched to like it!
I'm currently on a medically supervised, food replacement diet that is not WFPB. I've lost over 30 pounds in 18 weeks. The program focuses on changing behaviors not on weight so I don't really have a weight loss goal but I know I still need to lose more. Now I'm slowing adding food back into my diet. As I add food back, I'm adding plant based food. I plan to take a WFPB class with my healthcare provider on Thursday - hope that will help me figure it all out. I have several cookbooks.
I'm looking for support as I make this lifestyle change. I get weekly meetings for life with the medical program I'm on but not many of the participants are interested in plant based. My instructor is very supportive.
In terms of the program I'm on - I add back one food meal each week and I'm on week one. The meal is 250 calories with 150 calories from a protein, 50 from healthy fat and 50 from non-starchy veggies. They don't want you eating nuts or dairy (not a problem) yet because they are trying to get you to pick foods that won't upset your stomach as you transition back to food. They also want you to each the same protein for an entire week for this reason - I couldn't fathom eating tofu every night for a week.
This first week I have added a dinner with 150 calories of quinoa, 50 calories of veggies (green beans, brussel sprouts or asparagus) with 50 calories of EVOO. The instructor told me I might need to add more fats to keep me satisfied. When I was only on the meal replacements, I wasn't hungry but now that I'm transitioning to food, I'm starving. I think the meal replacements had way more protein than I'm getting on plant based and that might be the reason. Any thoughts, encouragements, or suggestions would be appreciate?

I hope you transition onto a healthy WFPB diet as it is filling, healthy & nutritious. To lose weight whilst feeling satiated I find Chef AJ’s recipes on YouTube very helpful & delicious too0
