Let's do Lunch (ideas)!

Hi everyone! So things are going great low-carbing. I'm looking for some EASY low-carb lunches that can be brought to work. I've been eating 3 hard-boiled eggs with full-fat mayo for lunch and I love 'em! I can eat this everyday and I'm just fine.
The problem is the husband (lol!). He's doing very well and has lost 15 pounds so far. Problem is he's getting very bored with his lunches. Stuff that's been in his rotation are:
- Crab salad with avocado and mayo
- Burger no bun w/ coleslaw
- Sausage and sauerkraut
- Turkey chili
- Salad with tuna and full-fat dressing (is really sick of salads!)
What's your favorite take to work lunches? Please no lettuce wraps, etc! We need some MANLY low carb easy lunches.

Deviled Eggs (I use 1 TB mayo for each hard boiled egg, plus some Dijon, white vinegar, and a half pkt sweetener)
Chicken Salad (I posted the recipe over on the keto forum a while back)
cheese
Nuts
Leftovers (water LC item you had the night before)
Smoked salmon rollups with cream cheese and capers

You can't get any easier than leftovers from last night's dinner - it's already cooked!
I sometimes make extra to make sure there's enough for the lunch boxes.
On the rare day that I don't take leftovers, my other go-to items include:
Cottage cheese with a bit of fruit
Lunch meat rollups (spread cream cheese on slices of lunch meat and roll 'em up)0 -
A few other ideas:
Zucchini pizza boats
Green smoothies
Meatloaf - easy to prep the night before and you can munch on it for a few lunches0 -
Crustless quiche I do it depending on my mood
Any veg you want
Any meat you want (although i cook off the meat before i put it in)
Eggs/egg whites
Cream (i use whipping, or fresh whichever one is high fat at the time of buying)
i find it does 2-3 days (depends on how hungry i am, and how big i made it)
I've never had a ratio, i just try and fill up the cake tin. (dont forget grease proof paper)
Mix into a pan, leave in oven, take it out in 40-50mins0 -

On the subject of meatloaf... I love meatloaf! The recipe I was using prior to low-carbing added Stove-Top stuffing to the meatloaf in lieu of breadcrumbs (YUM!). I'm curious how to make it low-carb style...0
