Wow!! I want that soup right now.
Good chance I'll make it this weekend!1 -
And bonus! It kept me full and satisfied for hours!1

Thanks so much for sharing this! I make a big pot of homemade soup once a week during the cold months, and this is one I'd like to try.0

This doesn't make a ton. Maybe 4 or 5 servings. It's probably good to make sure you like it first, but I'll double it next time!0 -
Mmmmm! Sounds and looks delicious. Will have to give that a try. Thanks! for sharing @linmueller.1

Nice. Thank you, Lin!

Just an fyi, I shared some with my mom and she said it had really good flavor but was spicy. She's a wimp with spice, but if you are too, adjust seasoning accordingly. I like some kick and thought it was perfect. I made it "as written" and even measured since it was the first time I'd done it.1 -
I love some spicy and hot things but DW doesn't so we may have to put this together without the kick then I can kick it up a notch after it's made.😄1
-
I should add that somebody said it was a little too sweet. Mine wasn't at all, but I'm guessing my two small sweet potatoes maybe didn't equal they're one large. Works for me though because I really dislike sweet savory foods!0

@linmueller Would you be okay if others posted soup recipes in this thread? I love soup (especially in winter) and would love to share recipes and get ideas from others.0
-
Absolutely! I love soup too, esp as a veggie filled side! And I have a couple other recipes I can add as I make them!0

Here is an entry from me. A comforting hearty soup is a main meal for me in the winter months:
Mixed Bean Soup
1 lb mixed beans (I like Bob's Red Mill)
1 lb turkey or low-fat sausage
1 large onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
4 cloves garlic, minced
1 12 oz can diced tomatoes
1 6 oz can tomato sauce (I often use a specialty tomato sauce like Monte Bene)
¼ tsp red pepper flakes
2 bay leaves ( I use fresh or frozen bay leaves)
¼ tsp ground black pepper
2 tbs olive oil (use a good quality oil)
8 cups water or chicken stock
I personally find that it's worth the cost (which isn't that much higher) to use good quality ingredients and fresh or frozen herbs and spices. For example, I buy a pack of fresh bay leaves then freeze what I don't use, which lasts about 4 to 6 months.
Soak beans in water overnight. Rinse and place in a large pot. Saute onion and sausage in olive oil. Add garlic, green and red bell pepper. Saute an additional 2 minutes. Add remaining ingredients, bring to a boil, then simmer on low, covered, for 2 to 3 hours. Serve with grated Parmesan cheese and crusty Italian bread.

@Flintwinch that sounds great! I love beans (so filling and taste good too). I'm definitely trying this!
One question though, what flavor of sausage do you use? I'm picturing smoked 🤷0 -

It's up to you what you use: I used Aidell's chicken/pineapple/bacon sausage the last time, and it tasted wonderful.

Thanks Lin
Glad you liked it! I did warn you it was spicy, according to my mom, LOL, but it's such a subjective thing, hard to get until you can compare another person's taste to yours 🤷0 -

This is delicious! My mom used to make bean soup. It was alright. But THIS ∆∆∆ is NOT your mama's soup! I'll definitely be making this again! Thanks for sharing the recipe!0
