Clean Chicken Salad

Just wanted to share this delicious recipe. It tastes every bit as good as the mayo-based version.

-4 oz. chopped rotisserie chicken breast
-10 sprigs of parsley, chopped fine
-1 stalk celery, chopped med-fine
-1 oz. roasted pecans, chopped
-1 radish, chopped
-1/8 cup onion, chopped
-3 tbs of low-fat plain Greek yogurt (I use Two Good brand)
-salt, pepper, creole seasoning to taste
- 2 WASA crackers

Add all ingredients to a bowl and MIX! Spread over the WASA crackers and you have a healthy, high protein, meal that will fill you up!

    Sounds good. I'm gonna omit the radish as I'm not one for that. I tried an improvised chicken salad yesterday as I had chicken to use up. I only had 2 oz. of chicken, half a stalk of celery, and 1 Tablespoon of mayo. It was very bland. YUK. I'm 65 so maybe my taster is off. I only find sweet pickles & dried apricots & smoked sausage tasty. :p I'm putting this recipe in my recipe box.
