Nice seeing you, Magic! I don't think anyone is all wfpb all of the time. I'm certainly not! We'd much rather see you! Read on for my day yesterday which was totally off plan. I just do what I can. Usually I don't write too much about my off days because I don't want to throw other people off track, but maybe when we all do that it gives the impression that we're not struggling.

So yesterday really was a doozy. Our power went out unexpectedly and Joe picked us up breakfast - an omelet with feta cheese, crispy hash browns, and sourdough toast with butter on it. I enjoyed every bite! I overdid yard work on Saturday and Sunday, so yesterday after my big breakfast I lounged around and read and napped. I did not burn calories, I accumulated them. In the afternoon, I blended up nuts, dried apricots and dates, and made cookie balls which I overindulged in until I was sick.

On the positive side of things, I am looking forward to my smoothie this morning. I'm going get in a big salad today with my left over dill dressing and I have the last of some cauliflower tikka masala to round things off.

My back is still sore, so I'm going to get in some office hours and when it cools off in the evening I'll do some ride on mowing.

Hope 'the gang' managed this long weekend better than I did! Cheers to a healthy start in June.

    Hi, Carla... thanks for kicking off June! Hope your back is feeling better today and glad you got your power back. I definitely am not completely WFPB at all times but I'm getting closer. I am always vegan but sometimes I'll indulge in some processed foods like blue corn chips, a recipe with daiya cheese, etc. I have been trying to limit that sort of thing to no more than 2 meals in a week. That gives me a little wiggle room if I'm eating out or I want to indulge in some wine, etc.

    Yesterday was much better than Monday. Oats with fruit and chia seeds for breakfast, raw veggies and Dr. McDougall soup for lunch, apple for a snack, ezekiel pita pizza for dinner. I think I shared my pita pizza creation before but if not I just mash a can of cannellini beans, mix in a can of tomato sauce and some italian spices, spread on ezekiel pitas. Then I load 'em up with veggies and a sprinkle of nooch, bake for 10 minutes or so at 425. Easy guilt free pizza!

    Still crazy busy with work. I know, y'all are shocked right?

    I guess I felt embarrassed or whatever not being able to post whole foods completely. Right now, I am using quite a bit of help from the convenience frozen section as well as a few pantry fun items...with random other entries.

    So thanks for the push to continue with y'all.

    My home is finally decluttered and looking pretty nice ... keeping up with the tidying up portion ...and have hired a cleaning lady ...a miracle lady...she comes every three weeks and does all the hard stuff.

    My organizer comes for one last 5 hour session tomorrow. We are back in the garage since I unloaded a storage unit several months ago. Did not go though any of it at that time...saved it for summer in Phoenix. LOL IN THE GARAGE NO LESS!

    Doing great health wise...need that total knee replacement...both knees but focused on my problem child, MY LEFT KNEE. Not sure when, since my coworker is getting hers done sometime soon. We both can't be out at the same time. More on this later.

    Lulu is still her adorable self...and without her my life would be pretty sad and lonely. Thank God For Dogs AND all Pets!

    Nanc, thank you for posting! I really enjoyed reading all that is going on with you. I hope you're able to get your knees taken care of soon. Joe and I have 2 dogs, Ruby and Radar, and a wonderful elderly cat, "Kittens." We adopted her and her name was Reba, which we tried to keep, but the three R names weren't working for us so her nickname eventually took over entirely. We had a house cleaner at our last home and it worked out great for two reasons: First, all of the mopping, dusting and hard work as you say was done for us. But second, we had to do a pre-clean before he came so that everything was accessible and not embarrassing! Made us keep up with the stuff that was slowly sliding into messiness. Garage organization in the desert heat...now that's commitment!

    Mihani, I will go a year or longer all vegan and then have eggs and dairy. I try not to feel guilty about it, and sometimes I'm successful ;) Thanks for the reminder about your pizza recipe! I have to try that soon. Hope you stay above water with work. Surprise the heck out of everyone at your office and book a vacation :)

    My back is on the mend, but aside from office work and cleaning yesterday, I didn't get much done. I am not a hot weather gal and it was in the low 80s here which was enough to keep me indoors for the most part. (cue the laughter for 80 degrees being too hot haha) I could go out early in the morning but then I find it hard to get my office work done later in the day.

    Plan for today
    b - blueberry and strawberry smoothie, black coffee
    l - garden salad, cantaloupe with cinnamon and a dollop of cashew yogurt
    d - sautéed broccoli, mushrooms & onions with baked tofu and cashews

    Quick reply, @Carla_wfpb YOU are so RIGHT regarding having the cleaning lady being the impetus to keep things pretty much under control. I want her cleaning and NOT cleaning around clutter...so stuff is now going back to where it belongs...and my clutter is definitely much more under control now. I want to spend the rest of my life ENJOYING LIFE...living a clutter free life.

    Bug guy has not arrived yet...have ants...coming into our bedroom in the back...off the patio. We are bunking in the front bedroom...(luckily I have a bed in each room I can now use...IKEA...TRUNDLE...easy to get in and out of)*...anyway...still waiting on them...hopefully by noon.

    The ants are probably hot...no rain in so long here...they are not horrible yet...been spraying with cleaning vinegar ...keeping them controlled somewhat.

    Lunch: Most like jimmy johns veggie with no cheese nor mayo...veggies only...follow your heart ranch

    Dinner: just egg, spinach, chao shreds, green salsa

    Dessert: ACAI bowl ... costco premade frozen section with granola topping

    Kimchi came from Sprouts...will try to get at least 2-3 oz in me daily.

    Last day for organizer with me...I always buy her lunch...so will order Jimmy Johns.

    Aw, so nice of your to buy lunch for your organizer, Nanc! I am trying to organize my home too, and it can be overwhelming. The more time I spend on one thing, the more out of control other areas get, especially now that I'm trying to redo all of our garden beds and keep up with mowing, weeding and trimming on top of inside stuff.

    Mihani, still loving your new kitchen? Are you happy with where you've stored everything now? I heard recently from a friend that has been waiting over a year now to get furniture she ordered! I hope yours comes much more quickly.

    I keep snacking on fatty things, so I decided to instead intentionally make a nice dessert for Joe and I - the pumpkin pie I posted about last month. It satisfies my sweet tooth, and I bet it comes in at a much lower calorie tally.

    today:
    breakfast - blueberry smoothie. i added some matcha today and it was so-so. i think i'll save the matcha for lattes
    lunch - popcorn and a slice of pumpkin pie!
    dinner - chili or sushi bowl with baked tofu

    So glad you are back posting here Magic. I did miss you! Glad things are going well with getting your house in order.

    Carla, yep still loving the new kitchen. There are still finishing touches to do, but my contractor is as elusive as the new furniture. Pumpkin pie... mmmmmm (homer simpson drool)

    I am super busy and stressed with work and not happy at all right now, so I'm struggling a bit with wanting to eat some not so great things like pretzels and blue corn chips, and definitely craving beer and wine, but I won't have any during the week because it makes me so tired the next day even if I just have one or two. Looking forward to opening a bottle of wine tomorrow though!

    B - oats with blueberries and chia seeds and a few walnut halves
    L - raw veggies, Dr. McDougall soup, some blue corn chips
    D - burrito bowl (new thing at the WFPB deli that I grab entrees from now and then... hope it's good) and a salad

    I've been slacking on my mindfulness and yoga the past few weeks with being so busy and I am going to get back to making sure that I do it every day starting tonight!

    How was the burrito bowl you picked up, Mihani?

    Our truck is finally ready to pick up today after the break down a few weeks back. There were various things wrongs with it, totaling $3800 for now, with another part needed to fix alignment when we get new tires, which are also needed. Something for another month! We don't use the truck much, only when we need to haul something or drive in the snow.

    Looking forward to our dinner out tonight in a restaurant overlooking the ocean with family. It has been way too long!

    Hi all! TGIF for sure. I have one more day (Monday) with no secretary, and I am off Tuesday, and after that I hope we can be fully staffed for a few weeks in a row. It has been crazy we haven't had a full staff in the office for a month with people sick or taking vacations. Yeesh.

    Carla, ouch that's a pricey repair for the truck. The burrito bowl was good. I don't think I would get it again, but it was fun to try and inspiration for making my own similar bowl. It had black and pinto beans, corn, peppers, chipotle tofu, quinoa. I though the tofu was overkill with the beans although it was very good tofu. I would have preferred the tofu with some spiced rice and grilled peppers and onions. The burrito bowl would have been better with more veggies and maybe some wilted greens, and just the beans not the tofu. Hope you have a great time at dinner!

    Magic, I have yet to try acai. I did get some goji berries a while back and plan to try those soon. They got buried in the boxes of stuff when I had everything packed for the kitchen remodel and were just recently rediscovered. I did a total remodel of the kitchen. It seriously needed it. Original 60's cabinets that had been painted multiples times. The layout was not very efficient and had a peninsula that came out in the middle to create an eating area which just made it cramped and awkward when I had people over. Now the counters run all the way down that long wall and there's a side run of cabinets on another wall. It is so open and bright and pretty now. New floors and appliances and light fixtures too. I will try to get some pics uploaded.

    B - usual oats with berries and chia seeds
    L - purple carrot frozen entree... quite good but not 100% since it had oil in it
    D - just a salad after a bit, not very hungry, and a glass or two of wine!
    S - a handful of triscuits

    I'm making a solemn promise to myself, no snacks after today. The blue corn chips and triscuits are gone and I'm not tempted by the other snacks in the cabinet at work.

    Austin, hope you are doing well. And hawksgirl and susannah, check in when you can!

    Gals, just posting here while I'm hiding from my disaster project in the kitchen! I decided to take allll of my many spices out of the spice cupboard and wash everything down and move the spices to another cabinet beside the stove. Emptied cabinet by stove and moved all of those things over to where the spices used to be...only to discover that the lazy susan i have for spices doesn't fit in the smaller cabinet. Everything everywhere and pretty much out of time to fix it until tomorrow since we're going out for dinner. Oops! lol

    Nance, I'm in about 2 hours north of Seattle. Our home isn't particularly close to the ocean (that would be nice!) but we are about a 20 minute drive away.

    Hi to Austin, Susannah and Donna! I think Donna is in Seattle now about to go on a big long flight to Japan. Safe travels!

    Thanks for the info on your remodel, @Mihani Gosh, what a project. I know you really did redo the entire house, I believe. My kitchen is so ugly...of course it came that way (bought home 2017). But I think I am going to work on getting new living room furniture first. My sofa is a hand me down from my sister. Too deep for me...cannot use it. only can use my Lazy Boy and I have to put pillows on it so that I can get out easily. Anyway, I am excited for you...having a new, beautiful kitchen that is also so functional has to be dreamy!

    Thanks, @Carla_wfpb ... now I know where you are. Enjoy your time at the beach. BTW, if you are on tik tok, they have loads of organizing your spices...I guess they get the jars from amazon...fill them up...so all the same size and then put in a drawer. Lots of options there.

    Missing you @AustinRuadhain ...My niece and her dh and baby girl will be coming here from Houston 6/19 for three weeks. I have not seen Stella (born June 2019) since December that year. My niece got me a photospring that she posts pics and videos on...and I see them daily in my house, so I have been able to keep up with her. Also she is good about texting pics daily. One day I will make it to Houston to visit.

    Ok, so yesterday I came up with the idea of doing a three day Nektar juice cleanse. I really do want to get away from so much processed food...so I am thinking a reset of my body might be a way to go. I have no time to juice that much, since I work long hours F - M. Wish me luck. Six juices a day. I picked them up last night. Cold pressed, but made ahead...not fresh. I have a friend doing the same thing so hopefully we can be accountable to each other and BE SUCCESSFUL.

    Best part...I don't have to think about prepping food for three days! blissysmile.gif

    Second juice in about an hour. Feel good …not hungry

    Yay for getting to see your grandniece soon, Magic! Stupid Covid sure did make it harder to see people the past year and a half. Good luck with your juicing. I haven't ever been able to do that. I've tried a couple times but it makes me feel weird for some reason. I can fast for a day but I can't juice. Maybe a blood sugar issue? I am not diabetic but my blood sugar fluctuates a lot and there is a history of diabetes in my family so I know I'm flirting with danger by remaining 25 pounds overweight. :(

    Oh, and yes you are right. I have been slowly (very slowly) redoing the entire house.

    Oy, Carla... that sounds like something I would do with the spices! Hope you were able to get it cleared up today. How was dinner? I have two 2-tier lazy susans for my spice cabinet plus a basket for the top shelf for the taller jars. I cleared out a ton of spices during the kitchen remodel and still have at least 50 jars. And honestly I mostly use about 10 of them! LOL

    Speaking of... what are everyone's favorite spices? I use a lot of pepper, Mrs. Dash, cumin, cayenne, turmeric, cardamom, coriander, garlic (although generally fresh not dried), rosemary, cinnamon, thyme. I use others of course, but those seem to be my go to spices. I may have forgotten one or two.

    I better get busy. I have been unforgivably lazy so far today and I need to start laundry and get up to my desk.

    B - skipped it
    L - ezekiel toast with avocado, baby spinach, sliced tomato, and an apple
    D - will be a big ol' salad with baked tofu

    Nice that you'll be seeing your family soon, Nanc / Magic (which do you prefer?) Hope the fast is great for you! I think the longest I've made it is almost 3 days on a juice fast, breaking fast for dinner on the 3rd day. Do you know when your knee surgery will be yet, or does that depend on your co-worker's procedure?

    Mihani, How is your weekend going? Are you getting in some time to relax & have you been doing your self care routine (yoga etc)?

    I'm still working on the can of worms I opened in the kitchen. I made it worse! but when it is done it will make more sense. I'm also getting rid of expired stuff and washing all the cabinets and shelves inside and out. I am leaving the spices where they originally were because there are just so many, and I ordered a second spice rack plus changed the heights of my shelves.

    For spices, I love ginger and cardamom in particular. Joe doesn't like cardamom so I don't end up using it as much or as often as I'd like. I use a lot of pepper, onion, garlic, cumin, chilies, and smoked paprika. I use dill weed on my tu-no salad so I go through quite a bit of that too. And turmeric whenever and wherever. I like cinnamon in both sweet and savory dishes.

    Dinner was wonderful! We had a clear sunny evening (it stays light until almost 10pm here at this time of year) so the views of the harbor and sailboats was very picturesque. It was great to be able to spend time visiting with my FIL and his wife. The restaurant is fancy casual if that makes sense. I wore some heels with jeans and was comfy and didn't feel out of place.

    This was a nice little break, but time to get back to my organizing :)

    Oh yeah... paprika and ginger too Carla. I knew I was forgetting a couple. So glad you had a good time at dinner.

    I am heading to the office for a few hours then stopping to visit a friend, pick up a couple things at the grocery, then Home Depot for some flowers for the front yard and possibly an azalea. I've been so busy that I left my desk in a disastrous state on Friday and it will make for a happier Monday morning if I go in and clean it up today.

    Hello dear peeps...

    Mihani, getting your desk ready for Monday is the smart thing to do...now you won't feel stressed about going into work tomorrow.

    Nanc OR Magic is fine, Carla...I love both!

    One of the gals I watch on YOUTUBE for cleaning and organizing is living with Cambria...she calls it organized chaos in the beginning...sounds like what you have. And in the end, it all comes together. (She has great youtubes ... and a hoarder series she did before COVID...they really helped me make the decision to hire someone. She did it for free in the area where she lived)

    My problem is that when I would get to that stage, I would have so much anxiety, I would not know what to do. So I finally came to turns with the fact that I suck at organizing and one day, THUMBTACK came on the tv as an advertisement. I decided to check it out and that is how I found my ORGANIZING ANGEL. When she left this last time, I told her it was THE best $$ I had ever spent on myself. Totally life changing for me.

    Now we started way back in October last year, in the garage. I have not let it get back to being bad or chaotic. I take care to follow the patterns she has set out for me.

    You know on the Hoarders shows...they go back to the people, and sometimes they are back to where they started. NOT ME. Now, I was not a hoarder, but I was completely unorganized and had too much stuff.

    She told me I was her best client. That made me feel good. On letting go of some things, especially sentimental, my philosophy is that you want to give it to someone who needs it and will be grateful...do not accept money...that takes the shine off the fact that you are making someone's else's life better, who needs help. The feeling that come from that totally makes up for the fact that you are letting go of sentimental things. At least for me that totally helped me to let go.

    It also helped in the area of having too much...and giving away new things that I spent money on that I was not using and had no space for. Shelters where they get to shop for free...I loved giving to those organizations and my ANGEL has connections with so many places that when she leaves for the day, I have nothing else to do but revel in our day's work.

    Wow, I did not think I would spill so much here. If you read it all, hope it helps someone.

    JUICING DAY 2

    Feel good...cravings are gone...will do three days and then I will eat veggies and make juice for days off. Back to juicing when working. That might be my routine for awhile. I had energy at work yesterday...did not have to fuss about what to take for that long stretch 8 am - 7pm. I can really see me getting back to WHOLE PLANT FOODS on my days off along with a juice or two I make.

    Ok, girls, off to get ready for work.

    You definitely sound happy that you have everything organized now Magic! I did a great job of clearing out my house, but my office is still a mess of paper. Even though I purged hundreds of books I still have too many of them and need to have some bookshelves built in a room upstairs.

    I wanted to go get flowers but Home Depot was packed with people and I hate shopping in crowds so I will go tomorrow after work. Hopefully it won't be so bad. Might even just order ahead and do curbside pickup.

    Pressing tofu to make a batch of baked tofu. Also going to make a stir-fry of bok choy, red pepper, green onions with soy sauce and ginger. And a pot of brown jasmine rice. Will make ginger miso dressing for this week's salads.

    Mihani...you're batch cooking. That's what I am going to do. Been watching TikTok to get ideas...

    I need the quickest, easiest...only have so much knee power, standing. So I need to be organized and know exactly what I am doing.

    I am excited to eat again on Tuesday. Have blood test...earliest they could get me in was 1...so fasting ... oh well. They said I could have black coffee. I said THANK GOODNESS!

    At work...on my third juice. Not hungry...cept when I watch High Carb Hannah and her today's Youtube. Looks yummy.

    Beginning day three...feel good...not getting enough sleep...but not feeling horrible...feel pretty good.

    Loads of extra time in the morning since not fooling around with what to take for work...nor am I stressing about it.

    I really am loving juicing, particularly at work.

    While the scale is definitely going in the right direction, the goal of this juice fast was actually to reset my body and move away from so much vegan convenience food and figure a way of prepping WFs so that I do not go back to my old ways.

    I know batch cooking is the way...I just have to figure a way to do it on my days off in stages so I do not have to stand for so long. I need to get better at sitting while prepping.

    Anyway, my decision to do a juice fast seems to be a really good move for me. I feel pretty darn good and am taking some pounds off my very sad knees.

    I'm so happy to hear that juicing is working out so well for you, Nance! It is great to find something that just feels right and what a bonus that it saves you time. For me, intermittent fasting is a game changer. I need to get back to it. I wait until 10 or 11 am to have a smoothie for breakfast, normal healthy foods during the day, and then I don't eat anything after dinner, which we try to have at 4pm. It works well for weight loss, and since I'm up 7 lbs (yikes!) it is time to get back on the band wagon. Today!

    We harvested our broccolini this weekend. For the amount of space it takes up and the small yield (maybe we suck at growing it?), it won't get a space in our garden next year. Our first strawberries are ripening in the garden and they are SO flavorful. Next year we're going to try growing them vertically to keep them up high, away from our dogs who also love them and feel free to eat them off of the vine grr!

    House deep clean and reorganization is continuing. I started watching 'Clean my Space' with Melissa on YouTube and it is motivating. I'm also checking out decluttering videos as I go. I prefer the look of a less cluttered space and the huge bonus is the time it saves on cleaning. I need to set up a schedule on my calendar to keep up with things. Weekly, monthly, quarterly tasks.

    Today's plan:
    breakfast: blueberry smoothie with greens, flax seeds, banana chunk, almond milk
    lunch: salad with baked tofu and a wfpb dressing
    dinner: Moroccan lentil stew

    if I 'need' to have a snack after dinner, I'll make a tea latte with almond milk. I read that if you keep your eating at 30 calories or less during fasting times, your body stays in fast mode. I have an almond milk that is 30 calories per cup so I'm going to sneak it in! (Plus after amalgamating all of my teas, I definitely need to start drinking some to bring my supply under control!)

    So glad to hear the juicing is working out so well for you Magic! And that your knees are feeling better.

    Carla, you have undertaken a big project! I have been really good about keeping things under control since I did my grand purge of the house a year or two ago. I don't want to have to do that again until I move! I had good results with intermittent fasting too, but my work life makes it difficult to eat dinner early so I have to skip breakfast if I want to keep to a window.

    I'm working from home tomorrow and having lunch with a friend at noon. Looking forward to seeing him it has been a few years.

    B - oats with the usual additions
    L - Dr. McDougall soup, raw veggies
    D - leftover stir-fry with baked tofu and brown jasmine rice (wow did that turn out tasty!)

    I have Clean My Space on my subscribed list, Carla. I need to watch her more...she has great HOW TOs...

    And I agree...less is more in the decorating department. I used Ikea for office/guest room and master bedroom...planning on seeing if I can find a sofa from them that will work for me. I need something that is stiff and will not sink and is high so I can get in and out of easily.

    Ikea is in Tempe...not that far...but it is a job for me, since the place is so big. Anyway, I have decided my taste IS Scandinavian Minimalist for sure. Growing up in a Jewish home with a mom that loves her TCHOTCHKES

    ...WELL...that is a lot of the sentimental stuff. Once I get my new living room/dining room furniture, I will have my organizer come back and we will see what exactly fits and looks nice, displayed (lots in boxes now in the garage). Once that is done, the rest must be donated, unless I rotate stuff. It all CANNOT be displayed at the same time. Less IS more!

    Today is Day 4. I have an ultrasound of my belly today at 11 and a blood test at 1.

    Long story but I had changed to a plant based doc in 2020...drove way deep into old Scottsdale to see him. 50 minutes, as opposed to my old doc, 15 minutes away.

    Anyway, without going into too long a story, they were about to do surgery on a what they thought was an abdominal hernia on me a month ago. BUT, I ended up wit an abnormal EKG. Further tests on that Thursday. Anyway, I just got the feeling that this plant doc did not really know me, and was not paying attention to me when I saw him.

    Went back to my original doc. He checked my abdomen and said he thinks it's a LIPOMA, benign fatty tumor. NO big deal. He said, did they take pictures. NOPE...oy vey.

    Today, pictures. NO more going back to my plant doc. Sticking with my regular doc.

    MORE on irregular EKG another time...this is already too long.

    My mom loves her knick-knacks too, Nance! I like the term tchotchkes better! Mom likes all things "cute." Hope ultrasound and blood work goes well with good results!

    Yay to lunch out with a friend, Mihani! It is nice to reconnect with someone you haven't seen in a long while.

    Speaking of reconnecting, this past week one of my friends from 9th grade (!!!) got in touch with me. She lives about 4 hours away and so after 30+ years we will try to get together once the border opens up. That prompted me to touch base with a college friend that I haven't seen in 15+ years. We now live about 20 minutes away from each other, but with that darn border between us. She recently broke 3 ribs after getting thrown off of her horse and so she is sitting around and itching to come over for a visit. The border rules might be loosening this month on the 22nd, so we're waiting on that.

    The kitchen reorganization and deep clean is continuing. There are little areas of payoff, but overall things are looking a bit messy since I'm setting some stuff aside for specific friends and family and other stuff for donation. I'm feeling really good about letting go of the the stuff that I don't need.

    3 of the 7 pounds I gained was water weight from my sushi bowl dinner. I over-poured the dressing on my meal and it was very salty. Happy to see the 3lbs go away, now to get rid of the other 4 and then continue.

    forgot to mention, NutritionFacts.org posted a video recently on research on black cumin seeds. It has been shown to be good for cholesterol and triglyceride levels, blood pressure, blood sugar control and weight loss. Only need 1/4 tsp a day to get the results. I ordered some on Amazon this morning! (peppery flavor, can use in a pepper mill like pepper)
