    T- Thai Eggplant

    IMG_0293.jpeg

Thai eggplant is a general name for several varieties of small, golf ball-sized eggplants, crucial to Southeast Asian cuisine. They are known for their distinct appearance, a slightly bitter, earthy flavor, and firm texture that holds up well in curries.

    Appearance and Characteristics

    • Size and Shape: Most common varieties are round and about the size of a golf ball, though some longer, thinner varieties exist.
    • Color: They come in a range of colors including pale green, dark green, white, yellow, and purple. Many feature mottling, stripes, or dots.
    • Skin: The skin is thin, smooth, and glossy, and typically does not need to be peeled before cooking.
    • Flesh and Seeds: The flesh is solid and springy, and most varieties have a high seed content, which contributes to a crunchy texture and mild bitterness. The seeds are generally small and white or cream-colored.

The sage brush that we have growing in the mountains can not be eaten but the smell when we walk through it is lovely.

T- Thyme is called "tomillo" in Spanish (pronounced toe-MEE-yoh). This is the universal term used across all Spanish-speaking regions for the common culinary herb known as thyme in English.
