White fish fillet with clementines

I have only the one portion recipe since I live alone...
- 1 clementine
- 1 white fish fillet 100g ( I use basa)
- 1 tsp of Extra virgin olive oil
- 1 tbsp of soy sauce( or just some salt)
- 0.5 cup of beet puree( you don't really need it I guess... I just bought some at the grocery store and I had to ise it it lol it's good tho!)
- 8 spear of asparugus
- black pepper
- 125 g of basmati rice (aka 1 cup of minute rice in the microwave XD)

Ok so it's pretty easy:

Oven 425F

1-You take a small pirex container and put the olive oil in it.

2-you put the fish in the pirex and you place the quarters of clementine around it.

3-Put the soy sauce on the fish and some pepper then the asparugus.

4- aluminum foil on the pirex with some holes in it. In the oven for 20 minutes.

And that's it you pur the rice on the plate with the beet puree and you slap what in the pirex on it.
It's really fuc***g good. I swear!
Oh! It's about 475 calories so you can skip the puree or use half the rice for less calories.

    I'd never heard of using beet puree with fish. I'm going to have to try this! Thanks for posting.
