I love eggplant parm, but I had never tried cooking eggplant before myself until a few weeks ago. I made a few variations just in case my family didn't go for it. My own eggplant parm, which was crazy good, dredged in egg and bread crumbs and fried in olive oil, an eggplant tomato sauce, and my typical bolognese. Obviously, eggplant parm is something I can't afford to have often, though I'm willing to bet I could probably bake rather than fry the eggplant and still get it crispy in a hot enough oven (This calls for exploration). What I found most interesting though was that of the two sauces - and my bolognese is to die for - the eggplant sauce, with the eggplant simply sauteed with onions and mushrooms, using the same tomato base and seasonings as the bolognese, actually tasted BETTER than the meat sauce. Aside from the protein afforded by the meat sauce, it was also lower in calories and much healthier. Especially when it came to fat content. So now I'm intrigued. Anyone have any good eggplant recipes?

I love it simply cubed and roasted, but Yo! Sushi in the UK do the most amazing melt-in-the-mouth aubergine (eggplant) dish, which I could eat plates and plates of. yum, I love it and make it all the time,,, I love it with stir frys, and goes real well with tomato and fall veggies..
my husband hates it because of the colour, duH> he will not even try it, I said if u try it, you will like it.
