Keto Vanilla Ice Cream

Technically this is a Frozen Custard. Delicious!

Ingredients
3 cups heavy cream
3 large egg yolks
1 large egg
3/4 cup granulated Erythritol* (I use Z-sweet)
Pinch salt
1 tablespoon vanilla extract
1/8 cup vodka
Cooking Instructions
Whisk together yolks, eggs.
In a medium, heavy saucepan, heat cream until it reachers a simmer (bubbles form just around the edge of the pan). Take cream off heat.
Slowly temper the eggs, by adding 1 cup hot cream to eggs, whisking as cream is added.
Pour egg-cream mixture back into pan with remaining cream. Whisk in sugar substitute and salt.
Place over medium-low heat and cook, stirring constantly, just until the mixture thickens enough to coat the back of a spoon, 3-5 minutes.
Immediately remove from the heat and pour into a clean bowl. Cover the surface of the custard with plastic wrap and refrigerate until well chilled, about 4 hours. Seriously - do not rush this step. Make sure custard is cold before going forward.
Before adding to ice cream maker, add vodka and vanilla. Freeze according to the directions for your ice cream maker.
Add desired mix-ins (follow instructions for ice cream maker). We did a batch of vanilla (delicious) and another with toasted coconut and a bar of Lily's Chocolate with Almonds chopped into it. To toast coconut, take unsweetened coconut and heat in a pan on med heat until coconut turns tan, stirring to ensure coconut doesn't burn.

* NOTE: I follow the guidelines in Dana Carpender's "Fat Fast Cookbook" concerning erythritol. "Erythritol is a sugar alcohol that is almost completely in absorbed by the body, and therefore can be counted as zero carbs. Also, unlike some of the sugar alcohols, erythritol has very little gastric impact." Glycemic index for erythritol is also zero. Based on this, I do not count any carbs / calories in the nutrition info from erythritol. If you aren't comfortable with this, be sure to account for it as you prefer.
NOTE 2: this ice cream will get very hard. Such is the nature of homemade ice cream.The vodka is intended to keep it a little softer. Our was still rock hard though, and needed to be softened in the microwave. Not sure if it just needs a bit more vodka. We also used a bit of xanthan gum to try to keep it softer. We added 3/4 tsp. Mixed results for this (a lot of clumping, and we had to smoosh it into a strainer to get the clumps out). If you have xanthan gum or guar gum, may want to experiment with it.

Isn't it yummy? It's such an awesome keto dessert. Hard to feel deprived of carbs with a batch of that around.0
